An easy to make pumpkin kueh that is soft and chewy to eat with natural pumpkin flavour.
Ingredients
300g pumpkin
250g tapioca flour
80g castor sugar
A pinch of salt
30g butter
50-60 ml coconut milk
Steam pumpkin until soft. Mashed and add the rest of the ingredients. Steam for 30 minutes. Cooled completely before cutting into desired shapes.
