Stellar Blade Great White Fish
You can catch the Great White Fish at Clyde's Oasis using Special Bait (not fantastic bait) and all 3 of the fishing tactics upgraded. That's what worked for me.
People in the comments are saying they caught it with the Special Bait.

I was able to catch it with the fantastic bait and all 3 of the fishing tactics purchased from Clyde. Glad to know special bait works too.

Which version update is this? Cause I think the animation is glitched for the Great White Shark. When I catch it it skips the catching animation & goes straight to the rewards screen so I don’t get to see the big fish upclose 😢

In the Settings Menu you can change the Fishing control option. I turned it on and you just need to press the SQUARE and R2 buttons. Much easier than the default controls.

Use Special Bait instead. Just got it now. Idk why the person who made this video said "Fantastic Bait"....

I caught it with Fantastic Bait. I also have all 3 of the fishing tactics upgrades. I'm just sharing what worked for me. Good to know special bait also works.
