Sometimes the up and down breaks the knife. Try turning like a doorknob instead to unlock the two shells.

Not up and down. That will break some knives on stronger shells. Turn like a doorknob or set of keys to unlock the two shells.

@seanwoodburn2616 the gigas oyster is commercially grown around the world, on every continent except Antarctica. I've found that many countries, including France, Japan and Australia shuck this species through the side because the hinge can be problematic (either obfuscated because it curls, or just too burly lol)

Yes. In 2009 I won the San Francisco Shuck and Suck by processing and eating 43 medium gigas. They can be problematic due to that curl. We tend to use a more robust shucking tool here than our colleagues in the East or the Gulf. Those New England and Gulf oysters are a dream to shuck. The oXo style tool is adequate. Most shuckers here use a narrow Dexter so they can penetrate the hinge. Cheers!

@seanwoodburn2616 I learned how to shuck with the Dexter "stabber" way back when. Don't compete but I judge - including the World's in Galway about a decade ago. Videos like this dumb the art of shucking down quite a bit and to your point, there's a knife and technique for every type of oyster. I wouldn't say all Atlantics are peaches! Some have weak hinges that just crumble.

Yup. That’s why the top part is dull too. You twist there, then cut with the front part of the knife.

I use those cloth gloves with the thick rubber grip/coating. It helps and I have been hired to open oysters for parties

A lot of shuckers have a guard and tend to be better than the thin knife blade, and when you have to open a hundred of them in an order, trust me, muscle helps.

Meh, I prefer oyster knives with a bit more of a guard... Especially as a beginner you're going to tend to slip on occasion, and having a bit more of a guard really does help with that... Beyond that, not all oysters are the same and like to be opened at the same point, and the more you mess around, the more shell fragments you'll end up having in your oyster... Yes, there are some tricks to it, but all in all it's just something that takes a bit of practice...

I feel like this ignores the fact that cheap oysters often fall apart at the hinge and you need to basically hammer a new hinge into the shell to get them open.

Exactly! Cheap oysters are young oysters that grew fast but doesn't have a ton of structure (or substance)... like the ones shown here. For oysters with weak hinges, I often approach through the side to cut the adductor. Though the knife is completely different than the one shown.

@@julieqiu I think the species matters too because the oysters I get have a completely crumbly dark shell, like it just *turns to dust* the moment an oyster knife approaches it.

@Barlakopofai yeah, genetics and predators/parasites definitely matter. Though those are usually weeded out before going to market.

You can have a towel and hold the oyster and you'd the knife not at the triangle side but at where it opens. It's easier and that's where the oyster is shut close. Once the knife is in. Scrap the top and it is done. Alot easier than this method

That's how I eat them in Venezuela. Just open them and put lime and done!. I love oysters but i never tested them cooked. Now in Usa they are not as cheap as my country so I want to taste them how I know I like them. Maybe someday I'll have the money to try 😊

Yeah where I am from (Vietnam) we either squirt some lemon on it or soy sauce and wasabi whilst the thing was just shucked like 10 minutes ago and down it raw. We do eat oysters cooked too like with cheese on top or with some spring onion oil and peanuts.
