I just went there a few days ago and it's nothing like normal ice cream! It was a deliciously weird experience. The strawberry one is amazing 💕🙌🏼 tho I wish I had tried the white chocolate one. I don't remember seeing it 😭

I kept on thinking this would have something to do with longfil. For those that doesn't know Scandinavian cuisine, filmjöl or fil, is a cultured milk a bit like yoghurt in consistency but much more sour in flavor. It's typically eaten with cereal or müsli and yam or sugar in the morning for breakfast. It's been around Sweden since the 18th Century or something like that (when people probably put tunnbröd, a type of flatbread, broken in pieces into it, but people still do today). So what is longfil? It's a stretchy consistency filmjölk due to the bacteria used to cultivate the milk. It seems to have been around since the 19th Century. I thought for a moment, that, maybe, getting stretchy ice cream would have required a similar technique. But, apparently, no, this is completely different. Very interesting video.

This is Arab. It doesn't melt that easily. I think it's made intentionally that way to withstand hotter temperatures (don't quote me). It melts in your mouth instantly though. It's fun to eat and tasty, too.

I’m fascinated to learn abt this middle eastern technique of making ice-cream that even predates the modern technique we know, and all the comments are: 1. “it looks like slime” 2. “it doesn’t look safe to eat” which I find extremely disrespectful and xenophobic. Of course it’s safe. People have been eating it for centuries, just not in your part of the world.
