Ingredients for Idli:
Idli Batter
Salt
Water as required
Ingredients for Chutney:
1 cup sliced coconut
1/2 cup coriander leaves
2-3 green chilies
A small piece of ginger
2 cloves of garlic
3-4 curry leaves
Lime juice
Salt
1/2 Tsp sugar
Water as required
1 tbsp ghee
Method of preparation:
In a bowl of idli batter add salt and water as per consistency.
In a mixer jar add sliced coconut, coriander leaves, green chilies, ginger, garlic, curry leaves, salt, lime juice, few grains of sugar and water. Grind them to a thick consistency. Transfer the chutney to a bowl.
Grease the idli steaming mold with ghee.
Spoon in the idli batter in each mold, stuff them with chutney and again layer it with 1/2 teaspoon idli batter.
In a cooker or idli container add water and allow it to come to a boil.
Place the idli stand inside the container and cover it with a lid.
Steam it on high flame for 8 minutes ( Tip: Do not use the whistle)
Allow the idli to settle for 2 minutes and then you can unmold them.

Idli or idly is a type of savory rice cake, originating from the Indian subcontinent, popular as breakfast foods in Southern India and in Sri Lanka. The cakes are made by steaming a batter consisting of fermented black lentils (de-husked) and rice. The fermentation process breaks down the starches so that they are more readily metabolized by the body.
Idli has several variations, including Rava idli, which is made from semolina. Regional variants include the sanna of Konkan.

You are so very right about salt. You should do it only if you stay in a very hot place so that it does not become sour due to excess fermentation.

Adding iodine free salt actually helps fermentation. Microbes need salt for growth however, iodized salt inhibits the growth so never add it. Iodized salt will change the taste by altering the microbe population.

What about its shelf life. Now a days it's quite hot. If I make it in morning around 7:00 will it stay till afternoon around 3:00 pm

It makes sense not to add salt during the fermentation process. Salt often kills microbes, and this might include those responsible for fermentation.

rahul kumar I am sure you can find a lot of recipes online to make idli batter.

rahul kumar , one cup of idli rice, then Half cup of urad Dal, few methi grains , soak in water for at least five to six hours, then grin the separately and mix it all, batter should not be runny or thick, leave it to ferment for 12-15 hours before making idlis. U can add backing powder also before making idlis, if you need more clarification then write it.

You should not over mix the batter, it will loose fermentation effect, that's why your idlies are not puffed properly, next time try with out over mixing, just 2 or 3 times mixing is sufficient
