I tried a variation of this with what I had on hand and pretty good. I didn't have the cheese but experimented with smoked paprika. Works well. I'll try a version sans pancetta for my vegetarian mom. Thanks Chef John.
I made this last night! We both loved it. My husband thought I may have been a bit heavy-handed with the cayenne, yet he soaked up every bit with his bread. :) Bonus? In case you did not know this, I just grabbed a taste of the leftovers with a fork... and this is DELICIOUS as a cold pasta salad! So guess what's for lunch, Chef John?

Thank you sooo much, I hate cream and milk products in my foods. I am not lactose intolerant, I just really hate the taste of all things "milk", especially cheese... sometimes I eat pudding and icecream.. but only on a good day. My whole life I had to skip all those "cream-pasta" recipes.. you just made my life better. :D

I *am* a big fan of your recipes - simple, elegant, healthy, and full of flavour. But I was aghast at your straining the roughage out of the cream. I'll bet if you added it, it would go virtually unnoticed! I will make the dish when I can get some fresh corn...live in a remote area. Thanks for posting the vid. "enjoy!" :-)
I left the tomatoes out of the cooking process. I added them fresh onto the pasta mixture just before serving. It made it a better summer dish, in my opinion. Otherwise, and excellent recipe. The corn sauce was delicious. What a great idea.

Hey chef john, great video once again. At around 4:30, in the filming of your pasta cooking, you included a convex reflection shot of the pancetta with the vegetables. I don't know if that was purposefully done but it certainly was a cinematic and beautifully stylistic camera angle choice.
This looks so light and delicious... perfect for summer! I'll definetly try it out. It might seems weird to ask, but any tips on washing your sieve/mesh strainer? I find them pretty hard to clean..

chef john could you possibly make a steak with chocolate sauce? i have been looking everywhere but the outcomes aren't that great and your instructions are really easy to follow.
