I feel your pain. I cook for 3 adults and all of us have dietary limitations- lactose and fructose intolerance, dairy allergy. It's a real challenge. About one week a month I get so tired of cooking, that I just take 3 or four 4 days off from cooking. I keep plenty of frozen meals and canned tuna and soups on hand, and tell the family our status is yoyo. You're on your own for a few days. No one has died yet 😀 great video.

Hi Mindy, I kept dinner easy for my family last night too. I " baked" some frozen croissants🥐 from Costco and made lovely sandwiches with deli ham, turkey and 🧀cheese. We also have plenty of local produce and I made a plate of cucumber🥒 and tomato🍅 slices. We also had some fresh local corn on the 🌽cob. Simple and delicious! Thank you for all your meal ideas. That would be me! The age old question of :What's for supper?" Is definitely grating on my nerves. We've been married 47 years and he expects supper on the table. We very rarely eat out. @@debiwillis9045 oh no, you misunderstood. Sorry. He'll eat anything and always thanks me for it even when its obviously not my best efforts. I just hate meal planning. Something happens every week to mess my plans and after 47 years of cooking and eating mostly the same foods I'm soooo bored. I'm just the worse for waiting until he's home and I need to cook something!! I'm retired so I have no excuse. I just need to get it together. When I worked, meals were preped in the morning. I need to get back in the habit.

How funny, I got up this morning and decided to deep clean my kitchen (desperately needs it). But the thought of turning around and cooking after just getting it all cleaned up....not happening. So I ran over to our bakery that has fresh baked French bread for $1 and lunch meats. Made subs and a pasta salad, put them in my just cleaned fridge for an early cold dinner tonight. Even made extra pasta for a pasta bake for the freezer for later in the week! Happy Monday!

Into a crockpot, add all the pieces of a medium, quartered onion. Cover with thawed or frozen boneless pork ribs. Optionally salt and pepper. Pour an entire bottle of jerk seasoning over the ribs and cook on low or high until done, depending on when you need them. Jerk seasoning is usually found in the dressing aisle near the bottled seasonings and salad dressings. I serve this over rice. We love it!!

pita bread + a couple 5oz. cans Hormel smoked ham + a few slices of Swiss cheese. Break up the ham in a pan and add the cheese. Heat through, and put into pita pockets for warm sandwiches. (To add a green, you could throw a little spinach into the pan with the ham and cheese.) This was great when my kids were little and we had to eat and run.

Hi, from Middle Georgia! You can peel peaches quickly by dropping them in boiling water for about 45 seconds then drop into a bowl of ice water for another 45 seconds. The skin will slip right off, leaving you with whole, beautiful, peeled peaches. No wasted peach…

My mom used to peal peaches and dice them. Add about 1/3-1/2 cup of sugar depending on how many peaches you used and how sweet they are. Set aside in fridge until ready to eat. Place a serving in a bowl and drizzle with a little bit of cream. Nice easy dessert.

Sometimes it takes a few tries. :) In the summer, I try to "batch film" things like intros and outros, and integrations for sponsors because I usually have one day a week where the kids are out of the house at activities or camps. Sometimes the kids hang out upstairs for an hour so I can get some things filmed. They understand this is my "work" and sometimes I need to complete it.

If you are sick of cooking, I can recommend frozen rice - cooked in the microwave. It costs a little bit more, but doesn't heat up the kitchen and doesn't dirty a lot that then needs to be cleaned.

There is no shame in pressing the "easy button" sometimes. I love how you do batch cooking as well. It is so smart to make one larger batch of your main protein and then have a couple of additional ways to reinvent it over the next few days so you don't have your family complaining that they're eating the same thing 3 days in a row. Plus, taking a few shortcuts and easy ways in the kitchen is still wayvheaper then breaking down and ordering pizza or going out to eat. I am just the one person household other than the dogs so I don't really have to worry about cooking for a crowd but a couple of suggestions are this time of year BLTs are awesome with all the fresh tomatoes starting to come in and you can use the precooked bacon to save yourself from having to cook it up. The other thing I like is breakfast for dinner. That can range from something simple as cereal and toast or eggs, pancakes, waffles, bacon, ready to eat sausage, toast or whatever else your family likes. Throw in a glass of milk and a little bit of orange juice or some fruit on the side and you've got a great meal.

I'll take a can of tuna (or some cooked, shredded chicken), and mix with a little mayo. Put this on a toasted English muffin, top with a slice of cheese. Pop in the microwave for a minute to melt the cheese. Yummy.

Love this way to prep ahead! Fall baseball season is starting and we don’t get home until 8:30 on game nights. One of my favorites that is similar to this is instead of the dressing to put chicken in the crockpot with salsa, taco seasoning and cream cheese. We put it on baked potatoes one night, nachos one night and tacos another. I also roast a large pan of vegetables on the weekend so I can throw them in the microwave quickly to add to an easy meal.

Love your channel, thanks for all your efforts on it! I like to cook, but work FT, and there are times when I'm fed up with being too busy. That's when I pop into Publix and snag a rotisserie chicken, a loaf of bakery rolls/bread, a bag of frozen mixed potatoes and a bag of frozen green beans. At home I dump the veggies onto a big sheet pan, sprinkle w/ EVOO and seasonings, throw it in the oven for 30 min and dinner is done. One pan to clean.

I like to go to sandwiches. We don't eat them often, I almost never take one for lunch so grilled cheese is a great dinner and if you want to get fancy I add basil and tomato to make it caprasie style.

My dad used to make a peach ginger sauce to go with pancakes. He would buy a lot when they were in season, make a big batch and freeze in individual containers to use throughout the winter. Some peaches were pureed, but some were left in slices. Sooo good.

Great meal ideas! I cook up ground beef, link sausage and chicken every few weeks in the crock pot and keep those in bags in the freezer as well as diced veggies like onions, peppers, celery. Do a quick defrost and add them in with some pasta or rice. We can make quick spaghetti or taco bowls and many other things. Some other favs using these are cheeseburger macaroni, chicken alfredo pasta and taquito enchiladas (with frozen taquitos).

This happens to me weekly... I've made a lose year long meal plan that gives me ideas for when I'm not inspired. I don't put specific meals on it, and I don't force myself to stick to a certain recipe a certain day. Also I've got to remember to pick up some crockpot liners, I always forget them!

My go to for quick & east meals are frozen meat ravioli with jar spaghetti sauce, I usually add some veggies to the sauce, & frozen garlic toast/breadsticks, frozen pizza that I also add veggies/extra cheese to & cut up side veggies like celery sticks, carrots and cucumber slices. If we want a yummy & hearty quick breakfast meal, then we do canned coney, chili & cheese omelets with frozen hashbrowns on the side & toast. The prep time for these meals is 20 minutes or less. Super easy, delicious & filling.

Here in Belgium we have a very easy recipe for the summer months. It's called "pêches au thon", which means peaches and tuna. You mix a can of tuna with mayo, salt and pepper - I like to add some capers - and you serve it with canned peaches. Super easy, quick, fresh and delicious. You can serve it with some salad on the side, hard boiled eggs, some bread or potatoes....

Me too! And I'm tired of cleaning it up! This is gardening season for me, so I have to make that a priority - to pick and can or preserve my veggies (and I work outside the home.) luckily my kids are grown and have homes of their own! My wife helps alot during this time. Thank goodness, but, we both are just really tired of food! Lol.

If tired of cooking means no oven, then my go to is "Catalina Salad" ie pinto/black beans in a salad with catalina dressing. If I am looking for quick and using the oven I do "Pigs in a cloud" ie cut the hot dog in half (but not all the way through and place mashed potatoes topped with cheese in it. Cook to heat up.

Definitely there Mindy!!! Dumping cans recipes when I'm exhausted Lol. I love making chili from scratch, but in a pinch I'll dump the cans. 1 of no beans chili, one of chili beans (blasphemy I know) and a can of chili with tomatoes, and crushed tomatoes. Add seasoning and even an extra can of chili beans. However you want. Or multiple cans to make chicken/taco soup. Raps, bean and cheese burritos, anything that is simple as possible especially when I don't feel like thinking or standing too long with my back out.

I totally get it. I don't know how you do it. I'm so glad you mentioned making wraps with that chicken cuz I was gunna say it you hadn't. I was also glad you used wishbone dressing cuz I think the olive garden one it way too salty. And oh my goodness, that ravioli dish looked so good. I have been on a tortellini kick lately I get Borello‘s in the box with spinach and cheese I cook it in the instant pot for four minutes then I add a jar of Alfredo sauce and mix it with some of shredded chicken

I'm so, done with cooking too. I make extra so I can have leftovers. If I have to use the oven then I will make two meals for leftovers. That way I don't have to cook, besides preparing the plate for the week. This heat in southern Arizona during August takes away our appetites. So I chill the house down an hour before we eat, otherwise I cooked for nothing. I loved this video as I totally relate too.

I have made your cream cheese chicken and added rice. I took thd leftovers znd rolled them in a taquito tortilla, cooked them in thd oven, cooled them znd froze them for later. Pop them in thd air fryer or microwave. Very yummy. Thanks Mindy

Great video, thank you. When weather gets hot, we use our BBQ grill non stop. I'm surprised how many of our friends don't use their BBQ like an oven and we also use the side burner ,, I would not buy a BBQ without it, its a game changer. Also use the crockpot often.

Ever tried making a peach upside down cake! Bet would be good. You can never go wrong with peach popovers or fried pies, or just mix them with blueberries and make a crumble or put on a slice of store bought Angle Food cake with some cool whip to top it. Homemade peach ice cream is soo good on a hot summer day. I want to do some of these, but right now my kitchen is torn up from water leak... for second time! Ugh!

I am in the same boat. I get tired of the same old meals and then will sit and try to come up with something new for what seems like forever. Then cook the same things anyway. I have been trying to work on that and also having the kids help out more. If they are happy with a quesadilla for dinner, by golly, they can make one and enjoy it. No harm in easy meals

I rarely feel like cooking and don't have to feed a family so I usually just make pasta. My favourite is egg noodles mixed with tinned diced tomatoes and grated cheddar cheese. The only seasonings are salt and lots of pepper. It's actually delicious and only takes about 10 minutes to make.

Oh I miss Lane peaches. We moved away from central GA, now in West GA. I have found that most recipes with canned peaches do fine with fresh, even better most of the time. My go to peach cobbler does have to bake in the oven but it's delicious! I really have to try the lazy lasagna. I've never heard of it.

Finally getting to your videos I’ve missed. I go through this!!! And I wish my husband & 2 youngest weren’t so picky! My husband tries to help sometimes on ideas but he is definitely a meat & potatoes guy! 😑 we’ve been married almost 16 yrs & he will try SOME new recipes so I guess I can’t complain…but I like to plan my meals & at times nothing sounds good or same ole same ole goes down!

I just made a very similar recipe, the olive garden signature, grates Parm + Italian seasoning on top, on low, transfer to a frying pan + reduce, super tender + yummy

I have 3 go too meals that whip up in less than 20 minutes! Shaved steak with onions, add cheese and make subs or quesadillas. Garlic bread in the air fryer and boil up some cheese tortellini and toss with a little bit of butter, olive oil, black pepper, red pepper flakes, Italian seasoning, a splash of balsamic and parm cheese. You could also use a jar of sauce! And lastly, if all else fails, breakfast for dinner! Our kids like raisin toast with scrambled eggs, and a hash brown in our air fryer (P.S. I love the air fryer!) give them some fruit on side if we have any. Also, a rotisserie chicken with a bagged salad mix or even, a quick cook rice, or pasta Alfredo. Alfredo sauce is incredibly easy and can be made all while your pasta cooks up. Throw in a bag of frozen broccoli and you have a quick well rounded meal. Look up Mississippi pot roast by belle of the kitchen, you can make the same recipe with chicken breast and chicken gravy vs. Brown gravy. I'm definitely going to try your ravioli lasagna Mindi! I like using fennel to season my sauce..Kids think there's sausage in there since fennel is used to season sausage.

Another great video! Thanks for these videos! I am finding that WM is carrying fewer and fewer store brands items like the dressing SO when I go to Aldi, I stock up! It is worth it! As for easy meals, that is my everyday thing! I love cooking but not standing in front of a stove! I just love making meals that are easy and yummy. By the way, Aldi and WM have real bacon bits for less than $2 for 6 oz & I love adding those into things without cooking bacon!

You do have to fire up the stove, but I canned my extra peaches for later. My kids are young and picky- they will each peaches from someone who is not me. Only one will eat jam, and I don't think any of them will eat cobbler. It's pretty annoying. I keep cooked chicken, pork roast, and taco meat portioned in the freezer, so when I don't have time or energy to cook, I usually grab one of those things. Tacos, nachos, enchiladas works with any of those, pulled pork or chicken, taco salad, chicken spaghetti...you can make a ton of things just from those batch-cooked meats. Having dinner half done makes it seem a lot easier any time, even if you have to make a side. I usually have spaghetti sauce either canned or frozen from big batches too. Another easy one is making bagel sandwiches in the toaster oven. My kids' favorite thing to eat, honestly, is a "pic nic." A plate with sandwiches, any random fruit, and some kind of chips or crackers.

I have a really easy fake peach cobbler, I make, using canned peaches. You could use fresh too. I take quick oats, butter, coconut sugar, brown it in a pan, almost caramelized.. then I add coconut cream, however much I want. I prefer a thicker sauce.. I cook that down for a couple of minutes then pour that over my peaches and add a dollop of full fat greek yogurt or some more coconut cream. It tasted 100% like cobbler, in my opinion.
