I like to remind people that simple flavors are one of the hallmarks of Greek cuisine. We don’t go for overly fancy, deeply complicated recipes because our cuisine was born of the food we had access to, that grows well in our country. To that end, we fill our dishes with fresh vegetables, herbs, olive oil, and vinegars because they grow so abundantly and are found everywhere. You just can’t beat a simple dish made with all fresh, local ingredients. Don’t be duped by a short ingredient list, even if it appears simple it’s going to taste wonderful.
This Greek Village Potato Salad is a simple salad that’s made in villages all over Greece. Every village has its own adaptation, likely because of what they grow in their gardens. I love to make this at home and fill it with pungent oregano and our family’s olive oil. The fresh flavors are so refreshing and satisfying for summer. This salad is easily served alongside any grilled protein and it can even just be a simple meal on its own.
When making this salad be sure to find the freshest ingredients you can for the dressing. The olive oil and oregano will infuse every single potato with gorgeous flavor so you want to make sure it’s as high quality as possible.
There are probably dozens of potato salad recipes out there and this one is a real favorite of ours. This has won over many people we know who swear potato salad should only be made with mayonnaise - that's not true! This is a real staple in our summer repertoire and will quickly become one in yours, too. It’s called “village salad” for a reason - it's common in villages all around Greece, that’s how often it is enjoyed. We hope you like it as much as we do!
