Really like this conversational video style. Especially with the information about the superlative coffee. Also thanks for the update on the shipping, I always assume you guys are looking to develop and make it better, but it's nice to hear what you're working on.

Our shop in Minneapolis, US also was roasting a Kanzu, and we hit the potato a few times, but noticably less than, say, Burundis. We also abandoned it on batch, and just used it for single cup, because those subtle notes did not translate well for us as a general drinking coffee.

For the last 3-4 months, my superlatives packages has taken 5-6 weeks after roast date. Previously, it would take about 3 weeks. This is perhaps partially due to my country, Sweden, adding another step at customs which delays the delivery and now adds another $10 as well. It’s pushing it to the point where I have noticed staling in the coffees. I hope it gets better. I still haven’t gotten December yet...

What grind for this brew method? Finer than a v60?

Since it resembles the Frech press brewing, I recommend you check out James Hoffmann's video on this. The extension of brewing really reminds me of his recipe, which allows the coffee to sit for 10 minutes until all the messes have fallen to the bottom.

Matt, how does this immersion method differ from doing french press?

Does not seem to differ at all. At the end you are just filtering coffee from extra fines. French press is also full immersion. Maybe here you get less fines to your cup if you don't have good quality french press like espro

Amigolla For the fines, ok could see that. Similar to the french press method James Hoffman demonstrates.
