カツオはタタキだ、刺し身はマズイって人結構多い、昔のカツオはマズかった、今のは美味いが、昔の記憶でどうしてもって人も多い、ワタシは食べ始めから美味しく頂けました、1992年

僕は、そもそも冷凍のカツオとか、血合いの色が悪いカツオは、買う気にならないよ…。 下ろしたてで血合いの色が赤々している1/4柵で298円くらいの鮮度抜群なカツオを、選びます。 勿論、柵から出ている水分は、キッチンペーペーで吸い取りますが、あまり手を掛けたくないので、ほぼそのまま切れる柳刃包丁で厚めに引き切りして刺身にしてます。
