In this video I will show you how to make candied orange and lemon peels for use in baking. As a rule, candied orange peels are used for Easter baked goods like kulich and for Christmas and New Year baked goods like panettone, stollen or German gingerbread.
For making candied citrus fruits, it is very, very desirable to use zest from organic fruits, i.e. fruits that have not been treated with pesticides. If this is not possible, the zest should be washed several times with a brush and soap.
For candied fruit, we will need orange and/or lemon peels, sugar and water. The ratio of peels to sugar and water is 1:1:0.5
The candied fruit can be stored for up to 1 year in the refrigerator under a tightly covered lid.
