Ingredients:
Raw Mangoes ( slightly ripe ) - 2 medium sized / 400 gms
Mustard seeds - 3 tsp
Cumin / Jeera seeds - 1 tsp
Asafoetida / Hing powder - ¼ tsp
Fenugreek / Methi seed powder - 2 pinches
Kashmiri Red Chilli powder - 2 tbsp
Turmeric / Haldi powder - ½ tsp
Jaggery / Sugar - 3 tbsp
Salt - 1 tsp
Sugar - 1 tsp
Few Curry leaves / Karee Pataa
Vinegar - 1 tbsp
Mustard Oil - 6 tbsp
Notes:
The colour of the Jaggery will also determine the colour of the Pickle
Let the Pickle cool completely, at room temperature before storing
Store the Pickle in a clean, sterilized, completely dry, airtight glass container
Keep in a cool dry place, once matured it should be kept in a refrigerator for longer shelf life
Let the Pickle mature for atleast 2 to 3 days before consuming

Literally followed the recipe exactly. The oil was nowhere enough. The chilli powder went dark as it usually does on cooking. I should have added it at the end to keep it colour and worst is the mangoes didn’t turn sloppy and gooey like your recipe after 5 minutes cooking or even after 15 minutes sadly. That’s no issue though. Just disappointed that the proportions were inaccurate so I had to eye ball everything which I didn’t want to do. I wanted to follow a tried and tested method :(

Monisha, This is a tried & tested recipe. We do not put out anything without proper tasting. Did you use the correct mangoes? Because you saw the results when I cooked it. We have mentioned the quantities we have used and the results are in front of you. I Can't really comment on your results as there are many variables in your hand which can change the final taste, look & feel of your pickle.

I wish we could post photos / videos as mine was too little oil for 400 gms mangoes. I diced them smaller as well and the colour is very very dark though I used white jaggery and bright red Kashmiri chilli powder. I was so hoping this would be my go to recipe :(

A pickle that lasts only two days😳?? Looking for a pickle recipe which would stay for at least a month

Keith, I guess you understood it incorrectly. Generally you need to wait a month for the pickle to mature before consuming it. This pickle can be consumed 2 days after it is made. It can be stored and consumed for months in the refrigerator. Hope it's clear now 🙂
