Ileen, this is the authentic way of making this dish. The color comes from the Kashmiri Red Chillies that we add to this recipe. Deep Fried onions are generally put in Mughlai dishes. But you can try it and let me know the result 🙂

I made this with chicken breast because it was what I had. It turned out really well, even only a couple of hours after cooking. Really delicious. It will be better still when I can make it with pork and mature a couple of days as advised. I was completely happy with my chicken version.

Joyce, We will be coming with a recipe for Chicken Vindaloo soon 🙂 You can try making beef Vindaloo using the Pork Vindaloo recipe. Keep in mind that pork has a lot of fat hence we didn't add too much oil. You will need to take care of that when you make Vindaloo using Beef 🙂

The way you are pronouncing Pork is the US version where there is more emphasis on the alphabet 'R' Whereas we use the British version where the 'R' is not stressed upon so much. I hope this clarifies the issue 😀

If you're in Goa you will get it in Panjim or Margao market. But check it carefully as they are also selling synthetic vinegar which is mass produced & is not so good. Ask them for Goan Vinegar made from Sur. It's a little more expensive compared to the synthetic version. Have a nice day. 🙂
