In today's episode we went to visit Lugar da terra. A small scale syntropical farm by the ocean in Portugal producing an abundant and diverse variety of regeneratively grown crops.
Tania and Job are very similar to our family in that they are also a multicultural Dutch and Portuguese blend and they also love regenerative agriculture and good clean food.

Many years ago Ernst explained "syntropy" to me.(I live in Brazil and farm in the drylands) It is actually simple in principle: Entropy is a form of degradation from the complex to the simple,(energetically speaking) as when you take a vibrant ecosystem and transform it into a monoculture. This system degrades into its simpler forms, as a body does after death. Modern agriculture is entropic. It is the agriculture of death. Syntropy is the process of ever increasing complexity and life forms. That is what LIFE does. Ernst says it is a strategy of Planet Earth to gain in energy. So in fact all regenerative farming , by definition, is syntropic as well, although it may have many other forms besides the famous "food forests" that Permaculture has been practicing for many decades. What Ernst has introduced is a clear vision of TIME in agriculture, of evolution in direction of complexity. This is huge.

No problem at all with a more indebt episode. Interested to hear about nutritional values of all kind of different vegetables. Understand the attitude of getting in to things and learn by experience, but I would also like to learn about the scientifical evidence. Could help me in my daily work in my practica as family doctor and interaction with te nutricionists we work with in the netherlands. Best part of the video is when you start cooking, amazing.

Our current conversation was very much about our own experiences and less about the science. But this also interests me very much so I would love to get into the nitty gritty!
