Good one, Amy. I do a similar dish but, in a pie tin. TIP: I cut a piece of parchment paper to line the bottom of the pan and it slides right out. I love the springform pan idea - I'm going to give that a try - but with parchment. :-)
You are 100% correct that parchment paper works wonders. I think Amy has the ones for pie pans. This pan is 9 inches so they would probably work. Yes, give it a try.....with parchment! Thanks for watching. She put some salsa down on the bottom to mimic lasagna. I'm guessing omit that and go with parchment then tortilla then salsa and beans and all the other stuff.

We put the sour cream on top for flavor. We added salsa for moisture and flavor. Baking sour cream might need a stabilizer like corn starch. I'm concerned about it's fat melting and adding additional liquid. So you may need to experiment. I know that's a horrible job, right? Experiment baking a taco casserole. I'll come over if you need a guinea pig. :-)
I have a kitchen hack for you. You should add a tablespoon of flour just when the liquid starts to come out of the meat, it will dry it up and the ground beef/turkey or whatever you're frying will fry faster. It works like magic. Instead of boiled meat because of all the liquid, the flour will give you a fried meat instead. I'm sure you can use whatever flour, I use ordinary wheat flour. Don't add the flour when the ground meat is still raw, like add it immediately when you add the meat to the pan or so, then the flour will just mix in with the meat and it will be a strange consistency. So add it when you see liquid is coming out, and just stir it in to coat the ground meat bits, and continue to fry like normal. Your taco lasagna looks stunning! Why have I never thought of making something like this? Now, I for sure will, no doubt about that! But I will add tons of ground coriander seeds along with the other spices. I just love coriander seeds!
I think that's a good idea for sopping up the liquid coming out of the meat. In Amy's case, she does like to add a liquid so her dry seasonings don't tasty grainy. It helps penetrate. In this case, she got careless and added way too much liquid. But that is a good idea so you don't have all that liquid. Thanks for the complement. It turned out pretty good. These spring form pans are DEEP so the resulting pies/casseroles are huge. Coriander seeds are great.
Ole! That's great. The anticipation when you unmolded it was so exciting! Will it hold.. will it collapse.. oh wow.. it's PERFECT. I'd take it even longer, crisp up that cheese on the top and the edges.. mmm... crunchy cheese. I know, that does nothing for you, Amy, although you'd probably like the esthetics. I live in Santa Barbara where Cinco de Mayo is basically a city holiday. I need some eggs filled with confetti smashed on my head for good luck this afternoon but no crowded streets for me this year. Calla Lily, we had NO idea if it would hold or not. Both of them were different. Guess the cheese helped on mine? And Amy's was more civil looking, so nice it didn't fall apart or have a landslide. You never know. Any liquid can cause bad things to happen. The cheese bubbled on the edges in the oven so we pulled it. I might have to do something in the air fryer with cheese. But yeah, fried cheese is tasty. Yeah, they don't take this "holiday" serious out on the East coast. Glad you get to enjoy it. Ole' anyway!!! Happy Cinco de Mayo to you too. Thank you. Rice Cheese? We used to use fake American cheese back in the day. Mix it with some butter and stir into rice. That was wonderful, but unfortunately, it still triggered Amy's allergies so we don't do any "cheese" fake or otherwise, in rice anymore. Glad you enjoyed the video. Happy Cinco de Mayo!!!

Hello DiDi. Glad you enjoyed it. Tried to have a little fun today. The flavor was good. Kills any sense of hunger for hours. I finally finished mine up. Amy loves those gold pans. She got the one at the William Sonoma outlet. Wasn't cheap. I don't recall if she got the other at the USA Pans sale.
Excellent video! Suggestion...I keep a few sturdy disposable plastic knives around to use in bakeware that I don't want to scratch, they work especially well when loosening around the sides and cutting through to the bottom and they are stronger than you would think and never damage the finishes of my pans. Try it!
