These spice rubs can be scaled up as much as you want, and you can leave the salt out too if you prefer salting on the spot.
Spicy Tahini Sauce
100g roasted romano red peppers (from 2-3 peppers - substitute with red bell peppers)
2 roasted red chillies (~20g)
1 raw red chilli
65g tahini
50g mayo
30ml lemon juice
1 garlic clove
1 tsp apple cider vinegar
1/4 tsp salt
1 tsp Honey
Tangy Tahini Sauce
75g tahini
75g mayo
50ml water
15ml lemon juice
5g ACV
2 small preserved lemons (~40g)
1 garlic clove
Herby Tahini Sauce
75ml lemon juice
65g tahini
50g mayo
25g parsley
25g coriander
20g green chillies
1 garlic clove
1 tsp ACV
1 tsp honey
1/2 tsp salt

Ooooo. I'm Lebanese-American, and you've inspired me. I need to invite a bunch of friends over and do a variety of grilled arayes. Offer an addition of caramelized onions to the filling, maybe some akawi cheese too, and use these sauces for dipping. People used to the standard burger at cookouts won't know what hit 'em.

Just wanted to say I made your recipe for Palestinian Musakhan Fatteh the other day for a lunch with some friends and it was amazing (they all loved it too). I’d never had actual middle eastern food besides kebabs and it was my first time making one of your recipes, but it sure won’t be the last. So many new flavors discovered with a single dish, it was great. I’ll be sure to make at least one of these sauces as I have plenty of leftover homemade tahini from that day. Cheers 🇵🇸

Can yogurt be used instead of mayo? Edit: I'll answer my own question: Yes, it can, at least for the herby sauce. I used it on the Middle Eats recipe for Turkish inspired dry-rubbed kebabs, and it was delicious!

I'd recommend searching "Middle Eats tahini" on RU-vid to see the recipes they've posted that include tahini, since ingredients are always listed in the descriptions. Off the top of my head, hummus is a big one, and tahini-based sauces in general are super versatile, so they're in many dishes. My friend also mixes tahini with sugar and spreads it on crepes, super yummy with a tart jam. Regardless of how you use it, it lasts for a super long time in the fridge, so you'll get through it all eventually, I'm sure. Happy eating!

Could do, though I would actually recommend using a high powered blender if you want it super smooth. A stick blender works ok, but will never match an upright blender.

They all sound great but where I live I can barely find red chilis (except red jalapeños in one area). Could I use green chilis instead?

Yes of course, use whatever chillies you find. I think jalapenos would be delicious

@@MiddleEats thanks! Yeah using poblano, Anaheim, jalapeño, or serrano chillies sounds good especially as they’re the only chillies I can get in my town (again other than one store in my town where I can find red jalapeños)

With the chilli sauce yes, but the other sauces no. Chilli sauces always taste better after aging.

If you like basic tunisian harissa let me suggest you try harissa 3arby. You will end up spreading it on everything. You're welcome. 😂

There are plenty of online tutorials where you can make it yourself. The ingredients are only lemons and salt.

nice ideas actually, but I have to say the use of mayonnaise is kinda disappointing. for me, the whole idea of a tahini sauce is to avoid mayo. I will try greek yogurt or something instead.

Yeah we use yoghurt in our tahini sauces all the time, however the texture is not as smooth or shiny. For a nice bottled sauce that can hold form, you need to use mayo, but if it's a dip or a loose sauce then yoghurt is more than good enough.

My bad, you're correct. We checked a boycott app and did some googling before we bought it but didn't see anything. On further checks though, it seems their Tahini is made by Samaritans on occupied land. We'll stick to other brands.
