Mujaddara is a lentil and rice dish that has been eaten in the Middle East for over 1000 years. The first documented recipe is from the 13th century cookbook Kitab Al Tabikh. It utilises cheap ingredients to create a flavoursome nutritious meal, that is entirely vegan and so easy to love. When serving it, you top it with fried onions, and then add any number of toppings to give it even more flavour. We're making 3 toppings, a spicy Gazan Salad, an Arabic Salad, and a Yoghurt Cucumber Dip

Makes 6-8 servings:
Fried Onions:
3-4 Large Onions
250g Olive Oil
Sprinkle of salt
Mujaddara:
275g lentils
200g rice
700ml room temp water
1.5 tsp salt
1 tsp black pepper
1 tsp cumin
2 handfuls of fried onions
2 Tbsp Onion infused Olive Oil
Arabic Salad:
2 persian cucmbers
2 tomatoes
3-4 spring onions
2 lemons
1 tsp vinegar
salt and pepper
olive oil
Gazan Salad (Salata Ghazaweya):
2 green chillies
2 large garlic cloves (3 small)
1 small tomato (diced)
2 tbsp lemon juice
1 tbsp olive oil
1 tsp salt
10g dill (5g of just leaves)
Cucumber Yoghurt Dip:
230g greek yoghurt
1 small cucumber (60g)
1 small garlic clove
1 tbsp lemon juice
1/2 tsp salt
1/2 tsp dried mint
2-3 tbsp water (or until it reaches preferred consistency)

The first recorded recipe for mujadara appeared in a 1226 AD Iraqi cookbook called Kitab al-Tabikh. A pot in Iraq is still called Jidir, mujadara simply means: cooked in a pot

Everyone knew the suffering of innocent Germans during WWII was Hitler's fault not the powers allied against his genocidal plans. Every dollar you give to Gaza will be stolen directly by Hamas or used to free up money to enrich its leadership in Qatar and conduct terrorist attacks.

I've been making Mujaddara since my poor college student days 40 years ago. Kids grew up counting this as one of their favorite "comfort" foods. I make mine very similarly to yours but I add whole garlic cloves to the lentils while they boil (a friend from Jerusalem suggested that long ago & I liked it that way). Also, I make double the amount you make. This is an amazing and delicious and very affordable dish. Thanks for highlighting it.

Do you put brown sugar and cinnamon and allspice in yours? My Iraqi uncle makes it like that and it's so good. But I noticed Obi left those out. The sugar and allspice and cinnamon are also included in Sami Tamimi and Yotam Ottolenghi's recipe from their Jerusalem cookbook. I always make double because it's so comforting isn't it!

​@@happydillpickle Even your name makes my mouth water! Going to fish out my dill pickles now! I have made this with Yotam's recipe. Cinnamon and allspice are too sweet in this recipe, to my taste. This recipe has the savory vibrancy that makes my mouth water -- like that dill pickle! Thank you for these wonderful recipes! I am especially looking forward to that Gazan dill sauce!

@@happydillpickleYUM! I usually add golden raisins and chopped dried apricots and a drizzle of date syrup to mine, cardamom along with cinnamon. And most of the time when it’s good to add pickles, I will add pickled jalapeños! Which makes it imperative to add lots of finely chopped coriander to the yoghurt. But that’s just me 😊❤

We saw this video last evening and immediately had to try this recipe. Sadly, the market ni the village where we live in Italy did not have all the ingredients so we had to improvise, especially with the ingredients of the Gazan spicy salad. Still, WOW! We had a truly amazing lunch and can't wait until next summer when our garden is producing tomatoes and cucumber to try this again. Hopefully we will find a way to grow dill here as well as all we have is dried dill in our area. That said, what an amazing dish. We love your channel and the work you do. شكرا!

Yes! My favourite food! I wanted to thank you, Obi and Salma. I've been struggling to eat properly and cook at home, but your recipes have changed my life. I'm motivated, and my cooking has just never been better. I didn't get the chance to learn how to prepare Palestinian food properly growing up, and now I can make all of my favourite things. I'll be preparing a special Christmas meal for my family, all thanks to you. Especially I appreciate how you explain how to prep and methods for cooking. That takes your videos to the next level, in my opinion.

I actually saw your video from a couple years ago about 5 amazing Palestinian breakfast dishes in my feed which brought me to your channel again. Your recipes are always delicious and your explanations are fantastic, definitely subbing so I stop missing out on all the deliciousness. Also definitely going to make this for my mother. Fantastic. I am extremely compelled by the fried onion method (I've tried making crispy onions before and never gotten it right), and the salata Gazawiyya. You're right about cumin aiding digestion, and rice with yogurt - sounds like a really banal combination but it's divine. Bless you for consistently speaking up for Palestine. Palestine will be free!

My friend sent me this video thinking it sounded like a dish I would enjoy. Halfway through the video I had already decided I wanted to make it for myself! All the sides sound super tasty too. mjuddara is SOO under rated! I was taught to make it 4 parts lentils to 1 part rice, but i think thats a testiment to the variations the dish can take and still be to true to what it is!.

Reasons why this channel is the absolute best: 1. Amazing food. I've tried many recipes, and used them to impress my partner's parents, and everything has been delicious. 2. Not afraid to speak out 🇵🇸 The people of Palestine do not deserve to have their lives, their homes, and their culture destroyed. 3. Occasional appearance of Mr. Maple the cat 4. Bit of a deep cut, but in one Q&A video, Obi said that if he had to pick one non-Middle Eastern cuisine to eat forever he'd pick American... because there's American versions of cuisine from all over the world. So many people don't get this, just the sheer scale and variety of American food, which is grown and enriched by every immigrant community we've ever had. As a Chinese American who grew up on both American and not-so-American Chinese food, I appreciated that a lot.

I had mujadara for the first time when I was in At-Tuwani (I was there to meet with an Italian association walking children to school as the colonists attack them on their way to school) and I found it delicious. It was served to us on a big plate to be shared and I couldn't stop eating! Thank you for the recipe, I'll try and make it.

Thank you Obi for showcasing my favourite dish in the universe! I add a teaspoon ground cinnamon, a teaspoon crushed allspice berries, two teaspoons crushed coriander seeds, 2 teaspoons slightly crushed cumin seeds and a teaspoon crushed black pepper to the oil I fried the onions in (same pan), then fry the dry basmati in that oil and spices mixture until the rice becomes translucent. The magic ingredient I add is two teaspoons of brown sugar, the darker you use, the more flavour. This makes is insanely moreish. I then add the cooked lentils, mix in with the water I drained from the lentils along with any extra water that might be needed. I fry my onions in batches in very hot oil til they're super crispy but not quite as brown (light olive oil is the best) after salting and flouring them and letting them sit in the bowl I floured them in for 5 minutes for their juices to absorb the flour first: different from your version but less oil needed and I find it easier. I'm going to have to try that huge batch all at once. It's reminiscent of the fisherman's rice you did a video of which was incredible.

I made friends with my neighbour and his family who are from Alexandria, Egypt...Our friendship has grown beautifully, and as you said last year, food builds bridges...Just checked your community page and yes iv'e donated to Palestinian Children's Relief Fund...It is disgraceful what we are seeing...So very painful to watch...I think the scene of the young boy crying for his father a few days ago after the missile strike will haunt me for the rest of my life, like other iconic images of war and suffering over the years still do....Love to you and your family from myself and my family.....

I am not a fan of lentils (will eat but unenthusiastically) but I love mujaddara. I sometimes make it with bulgur wheat as well. Also love how you are not afraid to speak out for Gaza

I just discovered this dish last week and I am making it for the third time today. Yours is the first recipe I've seen without tomato sauce/paste, but if the dish is as old as you say then I guess that would have to be a relatively recent addition, lol. I'm gonna try it this way today

I love seeing commonalities and cross pollination across cultures from all things, be it music, food, language. In an Iranian household, this is a staple that never lets me down, in my house, this is often accompanied with a sunny side up, scrambled egg, ground beef, salad, just about anything to hand that you like. Just one of the staples I grew up with that I love seeing regional variations of.

I grew up eating mujadara made with cracked bulgar wheat instead of rice and i really prefer both the flavor and texture and the ease of preparation. Instead of cooking with the lentils, which can result in either the lentils or rice being a bit under/over done, you can prepare the bulgar right in the bowl you plan to serve from by just adding boiling water to the grain and fluffing it up after a few minutes. Love this onion method!

I’ve been making and enjoying this dish for years. I make the lentils and brown rice with cumin and some broth. I add chopped spinach just at the end. After plating, each person adds their desired amounts of lemon, labne and sautéed onions. It is simple and healthy comfort food - a staple in our home!

This looks amazing specially with the sides of Salads! I think many country's cuisine has a basic one pot rice and lentil dish that serves carb, protein etc all necessary nutrition in one meal. In Bangladesh its Khichuri, made with rice, red lentil & simple spices. Ideal baby food, and ideal adult food both. When you add an omlete and/or Alu bhorta (spicy version of mashed potato) it tastes even more heavenly. Its a great student meal as well; as its cheap, nutritious and easy to cook.

You've consistently showed up for so many countries in pain, when the western world has turned a blind eye. You're an amazing cook and an even better person. I wish you didn't have to humanize middle eastern people, but I'm grateful you're doing this nonetheless. Thanks for another amazing recipe, I'm excited to try this out.

Such a great recipe. I followed his exact steps. Next time, I will use fewer lentils, and I will add more water and cook them longer! Give us more one pot wonders!!

I attempted to make Mujadara the other night - but my onions weren't crispy like these. Definitely going to use your method and make the Gazan salsa ! - I love dill. Thank you !

I just finished eating, took me quite some time to chop up all these things but it turned out amazing! That combination of the salad, yoghurt sauce, spicy topping and lentil-rice was amazing!

Update: made it and served it with homemade pickled cucumbers and the tzaziki and some classic indigenous style stewed deer meat with tomatoes and it was DELICIOUS! Definitely going to be something I make part of the dinner rotation and personally my new favorite way to eat lentils 😋

many families in the northerner part of Palestine like mine substitute the rice for bulgur and sometimes we cook the onions until they're charred and use their juices to stain the lentils blackish brown. interestingly enough we also only eat it with salata balady and yogurt but never kheyar blaban ( cucumber yougurt ) I'll have to try it next time although I'm sure it would be fantastic.

I'm going to follow this recipe next time. I've had such difficulty getting lentils and rice done well. Seems simple, but I've not been cooking the lentils before hand, which was the the problem. The accoutrements seem delicious also.
