that kinalas looks delicious, but maybe you should try beef mask/beef cheek. the reason why it's called "kinalas" is because after you boil the cow's head/mask, you "kalas" (detach) the meat from the bone/skull, and that's the usual meat we use in kinalas. :)
yes agree completely! Face can be hard to find in supermarkets in Manila, so just switched it out with Short Ribs, so that there is still that bone element :)
I miss eating kinalas. I'm from Manila but I studied in Bicol (Naga), and that is what always go for (and toasted siopao) every time I get to visit. Thanks for featuring it.

Just wanted to say that I think hae bee is dried shrimp which comes from the Hokkien word Hae for shrimp, bee for rice because it’s dried and as hard as raw rice. The Tagalog patois became heebeh. Your vlog is always full of good information. Thank you!
I really appreciate this content, same same but different. It would have been nice if the other chef cooked the different recipe on the process and be able to taste that country's version of the dish.
Had this once in Bicol a long time ago. I forgot what it's called (it's not common in Manila), but can always remember how comforting and delicious it is. Definitely going to try making some Kinalas.

Huhu I miss eating and sipping hot beef mami sa mga kalye-kalye and the Sinanglaw of the Ilocanos. Medyo na OOC lang po ako dun sa mga cookware nyo po, medyo may little bit of dirt/grime. The OC me is always noticing this on you videos 😅😁✌🏼
