❤️ Taiwanese Style Tomato Mackerel Recipe - Cooking with Fen & Lady First
💛Ingredients:
Mackerel 600g
Tomatoes 4
Garlic cloves 8
Ginger 100g
💛Seasonings:
Salt 1g
Light soy sauce 1 tablespoon + 1-2 tablespoons for cooking on stove
Rice wine (first distillation) 1 tablespoon
💛Main tools:
Stainless steel Chinese-style wok
❤️Directions:
1. 01:28 Handling Mackerel:
- Clean the mackerel, remove the head, tail, innards, and blood clots along the spine.
- Use a mallet or knife to gently pound and cut the fish into pieces.
2. 03:29 Adding Ingredients:
- Arrange the mackerel pieces in a deep dish, place garlic cloves, ginger slices, and chopped tomatoes on top.
3. 04:53 Cooking in Electric Cooker:
- Pour 130cc of water into the outer pot of the electric cooker, cover with the lid, and cook for about 20 minutes after the cooker switches off.
4. 05:44 Cooking Tomato Sauce on Stove:
- Once the fish is cooked, transfer the broth (without the fish pieces) into the wok, add a suitable amount of soy sauce, and continue simmering until the sauce thickens slightly.
- Taste the tomato sauce for saltiness and adjust as needed. When the sauce reaches the desired consistency and saltiness, turn off the heat.
- Arrange the cooked mackerel on a plate, drizzle with the tomato sauce, and serve.
