This lesser known vegetable is one of my favourites. It is a quick and easy Konkan style stir-fry, using Red Amaranth leaves.
Ingredients -
2 large bunches of red amaranth leaves
2 tbsp oil
1/2 tsp mustard seeds
3 green chillies, slit
1 onion, chopped
2 heaped tbsp grated coconut
Salt, to taste
