"Sukiyaki" is a Japanese hotpot, but Thai people have taken the idea and created our own version of this hotpot with a bold flavoured sauce that better matches our palates. Not only that, we have created 3 different ways you can have sukiyaki (or just "suki" as we call it in Thailand)!
In this video I show you "suki nam" which is the kind of suki we have most often at our home. "Suki nam" is basically taking all the ingredients of the hot pot and turning them into one individual bowl of noodle soup. The key is in the sauce, whose flavour is so unique I cannot compare it to any other food. The only way to experience it is to try!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RU-vid channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RU-vid videos, her cookbook, and cooking classes. My local thai restaurant has suki nam and after trying your recipe, i can never go back to their food! Your recipe is so delicious and comfy, i literally drink it instead of eating it lol!

When that pot of cooked chicken with egg was being poured to the veggie bowl, that was convincing to me. It looked so good. That fermented tofu bean curb might be secret element in many famous Asian recipes.

It's exciting to see the fermented bean curd in your video as the one you are using is originally from my hometown, Beijing and it's an essential in our fridge. What we do is to use it as a kind of spread on steamed bun(OMG so good) or add to our dipping sauce. Also, it adds soooo much flavor to our Chinese braised pork belly dish!

I adore the sound effects you produce when you pour things in. People always make fun of me when I do that. It's good to know I'm not the only one that does it. Thank you for the recipes. My mom passed away and she always made it. Now I know how to make it. I like mine with a lot of egg, squid and chicken. I’ve never done chicken that way. Looks yummy

I have made sukiyaki in the past but since I learned about hot pot I wondered what the difference was. Thank you for educating me 🙂 I now make hot pot sometimes with a Japanese flair .

Thanks for another delicious recipe. I love love love hot pot. It's a fun way to have friends and family gathering around and mingle. And the best thing is all I have to do is the cutting and prepping. I love all the dipping sauce that you made. Can't wait to try this one out. There's a Mongolian hot pot in my area but they don't serve with any sauce and I like to have some kind of sauce to dip in. I go to Whistler in march or April for skiing. If there's any chance, I would love to meet you in person. thanks for your recipes so I could have a chance to broaden my culinary skills.

I used to have the real Japanese sukiyaki a few times, and felt it was always too sweet. It seems the Thai localized version is more salty and spicy than sweet.

This kinda reminds me of a pork spareribs soup my mom thought me how to make. Kinda like oxtail soup but with small chunks of spareribs instead. You would love it. It's not spicy though, you could make it spicy. Maybe I'll make it next week. It last for days and just gets better every day. Anyway, thanks for the video, looks yummy. Till we eat again.🌹

I always add garlic to my cucumber pickles, so it would be quite easy for you to make picked garlic, it is so easy.

Thanks for this. I have to try to make the sauce. We usually buy a ready made one at the Asia store. I haven't seen any restaurant in the Netherlands that serves suki. We make it at home. Every year when we get to Thailand MK is one of the first stops. Also delicious with their duck and crispy pork together with the suki. :-)

MK suki sauce is a little different though. I don't believe they use the bean curd.... This is more of a street-style suki :)

Love the video! Is this sauce similar to the coca suki hotpot chain? I love the coca suki sauce and always wonder how to make it. Also love your rooster bowl - did you bring it all the way from thailand?

Haven't had coca in a long time...but I don't believe it's the same. This is more street-style suki sauce. The rooster bowl came from a Thai store in LA :)

I was very brave and used the same amount as Pai. Am now waiting for my taste buds to come back ... (lol not really - actually it was the Kua Gling that was the killer - even when it was a toned-down version.)

Hello, Thanks again for an amazing recipe. My question is - as i can't find the red bean curd in my country - can i use the premade sauce: SUKIYAKI THAI 300ML - THAI DANCER for the whole sauce?

Do you think the MK idea would work in the West? I like it because it's kind of social and fun, and children like the experience. So do I for that matter. We have a Thai style suki yaki pot at home. Once my wife left me in charge of the chicken simmering in a pan to make the basic stock. I forgot all about it and was in trouble. The meat was still edible, but I tell you it was the best suki yaki base ever.

That looks awesome! One thing that gets me on occasion, I always wonder if there are some dishes that Adam had to be forced or bribed into trying? I know if I used fermented bean curd in any dish while my room mate was home that I would probably find myself living in the storage shed for a while. LOL The stiff can be quite pungent.

lol - you're just evil! :) While I was in Hong Kong for a bit I used to live right beside a chou doufu stand - so I know what you're talking about :) ... I'm ok with smells (now), but still some things I just won't do ... like balut. (apologies to my friends from the Philippines ...)

If you don't want to make the sauce, look for "Soya Bean Curd Sauce For Sukiyaki" or "Cantonese Suki Sauce". I found both at my local Asian grocery stores.

Yes, not everyone uses it in char siu, but for recipes that do it is this same one.

If you don't like it, don't force it! There are many other kinds of noodles you can enjoy :) But try my goong ob woonsen recipe before calling it quits ;)

This looks fairly easy and delicious! I think my kids would love this. My older son loves Thai and Chinese food so much. He's half Chinese he can't live without rice or noodles 😂 my question is how do you tell when the chicken is fully cooked? Will it still be slightly pink? My son is weird about meat lol

Fully cooked chicken is white and opaque.

You can also add the sauce into the egg, then scramble it, and pour into the soup!
