"Let those flavours BARELY get to know each other...talking corporate Christmas party." That is such wonderfully dry and snarky humor that it made me bark out a laugh, Tywin Lannister style. I'm using that one.
In the south, we make dressing. Mother's was the best. Day old cornbread cooked in a cast iron skillet - crumbled, not cubed, finely chopped onions and celery cooked with the turkey giblets, loads of sage... seriously, loads, and enough juice from the turkey pan to bring it all together. I can make it but Mother's was so much better.
My family makes cornbread dressing. We make fresh scratch cornbread in a cast iron skillet and mix that with onion, celery and green onions, turkey drippings and seasonings. It’s my favorite part of thanksgiving
As a German, I have absolute no connection to "stuffing". But these recipes do remind my of "Semmelknödel" - big dumplings made from dried bread with onions, herbes and egg. Perfect with every kind of gravy.
I keep threatening to make White Castle stuffing. One of these years I might actually do it. Chop up a sack of sliders (this gives the bread, meat and onions all in one) and then proceed with the rest of a traditional stuffing recipe from there.
It actually is the same. They’re different words for the same thing but when stuffing/dressing started being cooked outside of the bird some people got confused about the definitions
The knowledge you spread is more valuable than recognized. I and many others appreciate the time and effort you put in, and have put into, the quality videos you make.
If anyone wants a twist on the cornbread stuffing, my family cooks the onion and celery in the cornbread (just adding the chopped veggies to the batter before it's baked), and for the meat we do shredded chicken
Once we found cornbread stuffing we haven't gone back. We do it with bacon, apples, and onions. Never in the bird. Might need to branch out after watching this.
It's always interesting to see how other people make cornbread stuffing. If I made it like this, my entire family would disown me. You don't mess with Memaw's recipe.
What if on your 10 million subscribers special; you make either: The Simpsons- Ethiopian Dish (The Food Wife episode) The Owl House- Fried Orb (Really Small Problems episode) Cruella- Baroness' Lunch she mentioned The Looney Tunes Show- Daffy's Complicated Banana Split (Peel of Fortune episode) Steven Universe- Literally All Toppings Pizza
I have been told that a name for stuffing made outside of a bird is also known as “dressing”, but that sounds weird Also biscuit stuffing sounds like it could be made breakfast or dinner style - breakfast sausage, sausage gravy, stuff like that for breakfast, or back towards turkey flavor and poultry gravy for dinner… mmmm I’m hungry
I'm surprised that since you diverged from tradition that you didn't make a dessert stuffing. I was hoping for a brioche, fruit mince, orange, cinnamon or cardamom kind of concoction
Cornbread is crumbly and cakey and has nothing to hold it together, so if it's holding together in the dressing it's too DRY. Some things, like cornbread dressing, are supposed to be soft. Rely on your celery, onion, the crunchy surface, bottom and edges to provide some texture, and just try to appreciate something soft for a change.
Babish, can you make Liam’s Loaded Lasagna from I am Not Okay With This? Macaroni, cheese, maple syrup, ham, corn, A1, grape jelly, margarine, cinnamon, Fish sticks, soy sauce, graham crackers… would love to see it!!
I want to thank you for this video. Tonight I used the cornbread stuffing recipe and combined it with a coq au vin recipe that I got from one of my other favorite RU-vid food channels, Chef John. The stuffing was amazing. This is the first time I’ve made stuffing that didn’t come from a box. This channel has really elevated my cooking abilities and I’m having so much fun with it.
Love your videos. My mom has ciliacs disease (gluten intolerance), and chance to get something like a glutenfree bread video? I can make bread myself, but it would be cool to see a recipe for it on your channel.
Nice vid @babish. I don't know if anyone has suggested this to you yet, but you should try doing white castle stuffing one day! I promise you its a thing. lol
From Oklahoma but living in Georgia for the better part of the last decade. Meat other than turkey or chicken in dressing is a concept I'm just getting used to. Cornbread and/or croutons, onions, celery, sage, sometimes eggs (prefer it without), then turkey or chicken or *no meat at all (which IMO is the best)* with chicken or turkey stock. Very simple, but delicious. I have had Italian sausage dressing and found it to be so incredibly fatty, too much.
Not stuffing if it's not in the bird. It's dressing. Which is fine, because dressing is better, safer, and makes for a better bird, but it's not stuffing if you haven't stuffed it in the bird.
We do stuffing/dressing different in Canada. I make mine the Newfie way stale bread, onions, lots of butter and savory very simple but so good.I pretty much make turkey dinner for the stuffing and there's never enough
When I make cornbread dressing, I use chicken liver in addition to the sage sausage, swap out the onions for scallions, and add some green bell pepper.
Literally just made the Stuffing from the Last Minute Thanksgiving vid last night! Happy to have a focus on it with a whole basics episode! You do amazing work sir 👏
Try to find summer savory, use it in place of sage. Being from and growing up in eastern Canada, that's what we use instead of sage. Personally i find it a much more pleasant flavour. Great video as always, hope everyone is staying safe, and taking care.
