Yes!!! It's amazing how underrated meal prep is!!! As a Mama of several kiddos, I always make sure that their food is healthy, nutrient dense and (hopefully) delicious. But, I was finding myself cutting corners in my own diet because I was only planning ahead for meals that we would be having together. Realizing that oversight, and starting to meal prep for everything is a complete game changer!

I swear by meal prep you are right it has been a game changer! My concern with it is how long do the meals last in the fridge? Tips on how to preserve the food longer.

That's great to hear! 🤗 As a general rule, batch cooked items will last longer. For example: rice that is cooked and stored individually will last 5-7 days in the fridge. Rice that is cooked with sauce and veggies will probably only last 3-5 days. Also, watery veg don't last as long once cut (i.e. cucumbers, bell peppers, tomatoes), so keep that in mind if they are used in a recipe prep. 😊

The thing with meal prep is that if you have a family of 5 you need like a massive fridge. Which I don’t have sigh. I can meal prep for a few days or I can meal prep a few things but not much more than that.

Oh yes, I have heard that struggle before! 😣😣 One of my former students actually ended up getting an extra freezer just so she could have more storage space. What usually takes up the most space in your fridge now?

I was shocked when we were allowed to return to church and regular activities. My friends had all gained at least 50 lbs. I didn't gain an ounce on a plant-exclusive whole-food diet. From my well-stocked pantry, I made oatmeal daily and a pot of beans, rice, and cauliqueso every few days. I grew greens indoors, which kept me out of the grocery for months. My husband and I walked 2-miles, did yoga, and kayaked at the lake six days a week. To me, the pandemic was heavenly as it let me explore personal interests and not have the responsibility to work outside my home. I've remained a healthy, fit, trim, active hermit for the most part and feel content, joyful, and vibrant. Wearing a mask was triggering, so I didn't go around people for over a year.

Realize your privilege and be grateful for being able to feel and live like that during that time. Because for a lot of us it was truly traumatic, and we lost people or our health. Recognize how being able to say it was an amazing time for you is truly a blessing and a bit tone-deaf in certain situations.

I wish meal prep helped me. Theres always one commenter saying they cant do something because they have ADHD & today thats me! Lol. I will waste that food. I do better prepping ingredients, but ive discovered that preps for more than 2-3 days will end up in the bin. I really wish this worked for me, but i enjoy the meal prep vids regardless lol.

Oh no! Have you tried washing and chopping items instead of fully prepping recipes? Sometimes I find that helps me to be able to cook differently throughout the week. 😊

@Let's Eat Plants yes, I sometimes prep ingredients, that's the most helpful of the prep style I find (although I have my own personal method of prepping certain foods onto a tray in the fridge that works super well when im doing it, but that's a whole long story lol).

good on you for not slipping into the fat-acceptance trap, so many ppl get sucked into. I gained 35 pounds during 2020. I got into the habit of eating a pound of 100% all natural peanut butter every day. I lost the weight in 5 months without exercise, as I did pretty much the same thing you did;) (lowering the caloric density, and making sure healthy food was ready)

@@LetsEatPlants Yeah, I reduced my fat intake from about 200 grams to 15 grams a day. And my calories in, went from 4500 to 2200.
