If I make one batch of candle (with FO and dye) and want to do a burn test on just one 8 oz. candle, is it ok to leave the unused wax in the melting pot and reheat later. I don't want to make three of the same candle and find that after a burn test I need to wick up or down.

You can but I wouldn't recommend reheating the wax with fragrance in it too many times as it could start to affect the scent throw. I'd suggest pouring 3 candles with 3 different wicks to see how the candle burns with your preferred wick as well as one a size up and a size down.
