I know good pizza is made with good ingredients and technique, but it's also the passion, love, and effort you put into it. It's a so-called simple dish, but we all know it's actually not that simple. Many years of experience and still happy with same job - my full respect.

Very nice video about this Pizzaiolo legend! Completely different pizza dough than Neapolitan, of course, these two pizzas are also completely different style. 🙂

Salt at 3.6% of flour is not crazy at all as most pizza contains between 2.5 to 3.5%. The yeast amount in the video was 10 grams per 25 kilos, which is extremely low. I am not sure how they got a rise being cold fermented for 24 hours.

Just look at the video, that's FRESH yeast. In Italy dry yeast is an exception, we have fresh one available everywhere.

как удивительно в италии это ценят , а где то эта великолепная пицца считается браком. вот у нас это в продажу не пропустят, бортики кривые, пересушена, прогары, тесто слишком пресное

Ci vuole una via di mezzo tra questa che sembra una piadina finissima e si vede che ha pochissimo lievito ..troppo poco .. per il bordo bianco e olioevo ..e la napoletana che pesa sempre almeno 270 grammi col bordo enorme..

ok tutto, personaggio e pizzeria storica ma il processo lascia un pò a desiderare. Impasto molto ma molto grezzo con maglia glutinica che a vista non sembra essersi formata proprio al meglio, panetti stagliati cosi senza un nulla e quindi peseranno ognuno diverso dall'altro, impasto lasciato a seccare all'aria aperta visto che è pure poco idratato. Boh.

I want to be like him when I grow up!! I had to come back to SEE the Maestro again. (SMILE). The reason I want to know how to make Authentic Pizza Dough... is one I am part Italian... (D'Alessio) and I am getting ready to move back to Albuquerque, New Mexico (USA) to RE-Open my Acting Studio (stage performances) and this time we will have Mystery Dinner Theatre!!! The ONE thing I must have EVERY Week at the Dinner Theatre is "Authentic" Pizza... that we can be proud of to serve with the Acting Students... Do you have a simple (smaller) recipe that you can share on how to make the greatest dough and tomato sauce? I know I will never be anywhere as great as the Mastro here in this video... but I will try to Honor him... teaching my Acting Students to take pride from the old country.... "Bravo Maestro... Bravo"

😢 *_Estive em Roma e comi uma pizza em um restaurante ... qye tinha mesas na calçada ...(HORRIVEL PIZZA e FRIA) ... depois descobri que o proprietário era um Àrabe ... (sem informação) ... não se pode comer uma verdadeira pizza Italiana ... feita por "Mãos Italianas_* 🤷🏻‍♂️🤦🏻‍♂️

In meinen Augen die beste römische Pizza. Nichts kommt an diese Margherita Pizza heran. Diese Pizzeria hat mir die Liebe zur dünnen Pizza beigebracht. Nur wenige Straßen entfernt lernte ich meine Frau kennen. Ivo ist und bleibt ein zu Hause. I love it. Erst zu ivo und dann zu Marcello in die Bar san Callisto.

São maravilhosos todos, porém o Sr Ivo é o máximo mesmo, e gosta de brincar né, ele é duro na queda, qualquer hora dessas vou fazer uma visita aí, salvei o endereço, vou num vôo de 15 horas direto São Paulo/ Roma ❤❤❤

This looks good but the real pizza is Neapolitan and made very differently! In Naples the cheese would be buffalo mozzarella not to mention the tomatoes/ sauce? Sorry it doesn’t look that appetizing as would one from Naples!

In February of 1962 the ITL to USD exchange rate was 620 to 1. The 50,000₤ Francesco paid would have been $80.65 - or about $820 adjusted for Dec. 2023 inflation. Imagine buying a restaurant for less than a grand. Amazing!

I grew up Italian in the US and ordered a pizza with garlic on it in Naples. They looked at me like I was crazy and put one tiny sliver right in the middle. But when I ordered my espresso with a lemon twist, the waiter cried “no, no!” And three of the chefs from the kitchen came out on the patio to look at us. They didn’t know what to do and gave me a big wedge. My mother was from Ischia.
