This is a bread recipe I found from Master Sanshin. I thought he only made desserts, but I didn’t expect that he also had a bread recipe. Master’s recipe is just different. This bread looks ordinary in appearance, but it tastes amazing!
This bread has a light aroma of coffee and rice, and is filled with cheese and red beans. The four flavors blend well with each other, but you can taste their respective flavors in one bite. recipe:
Café au lait buns: 400g high-gluten flour, 100g glutinous rice flour, 40-50g sugar, 10g salt, 350g water, 6-8g instant black coffee powder, 4g high-sugar resistant dry yeast, 75g butter gram
Divide into 50g pieces each, put 15g cream cheese and 30g red bean filling into each dough
Bake: Place the middle and lower layers, raise the heat to 210 degrees, lower the heat to 180 degrees, and bake for about 12 minutes
Regardless of upper or lower heat, bake at 190 degrees for about 12 minutes
