Now yesss you can boil the potatoes without the skin for less time, but that will cause the potatoes to be mushy and we don’t want that since we will be adding the guajillo sauce! These look delicious. I've made mine similar except before filling the shells with onions and queso fresco, and maybe some cheddar, I spread with cream cheese and chopped black olives if I have them, then fry. It makes them extra rich but yummy and perfect for the cool weather coming up.
This brings back childhood memories my mom would make us tacos de papa and let me tell you they were the BEST tacos ever even now as an adult I make them still and you sharing a different way of tacos de papa brings me joy I thought My family was the only ones. I definitely will try your version ☺️
