You are so right about infusing the oil. I do a russet potato 🥔 that's coated in cornmeal after the "roughing up" step. They get so crispy!

This is really the best way to get roasted potatoes - in a pinch - you can cover the potatoes with oil and shake a packet of dry Ranch Dressing Then bake in oven - they turn out very yummy 😋

Hey Laura! Thank you so much for this simple yet delicious recipe. I made them along with roast chicken and it was a hit! Since I’m Indian I added a bit of chilli powder but it was definitely the best roast potatoes. The crunch was amazing!
