Cannot believe how simple and delicious this cake turned out! Big hit with the kids and my mother, thank you for the recipe. For anyone who tends to find things are sometimes too sweet, I used 1/4c less sweetener in the cake and only half the amount in the icing and it was perfect! New sub!
I finally got around to making it today, the recipe worked perfectly, couldn’t tell the difference in taste between this and the real one!! The only changes I made was to use brown stevia instead of golden swerve and pumpkin spice. Thank you so much, for sharing! everyone loved it.

I tried this cake and even halved your recipe. Used walnuts. It was delicious! I was able to cut the cake in half and make a double -layer frosting. It almost stayed in the oven too long at 29 minutes... one of the best keto cakes! Oh, I don't use swerve, but used 100% monkfruit by Julian Bakery.

thanks for sharing this recipe. first time to baked carrot cake actually made it into cupcakes baked it at 350F for 15mins. had left over cream cheese frosting. it was moist and good.
JUST MADE IT. This is the first keto cake I've made and its seriously the best cake I've ever had! I highly suggest matching the cinnamon with cardamom and omitting nutmeg. The cardamom smell and taste is heavenly

Yes, this is perfect, my sister is gluten free, I am keto, my mom is diabetic, and our husbands and kids will have had enough sugar. This recipe Amazing!! I had all the ingredients in steps for a long time so when I bought the shredded carrots it worked out great!!! It tastes Truely not Diet and its very very satisfying to the taste it tastes like real Carrot cake that is Not KETO or the original sugar filled cake. Even the KETO frosting just very very similar to buttercream very satisfying and just a piece is so filling!! Again very recommended for anyone on KETO or just Dieting! Thank you for this recipe. My Fiance has been craving carrot cake and this really hot the spot. So freaking good. I added 1/2 cup of Lakanto golden sweetener instead of 1/4 to the cake, and I actually think it could have used a little more for our sweetness needs threshold, but the texture and crumb are beautiful. I used macadamia nuts instead of pecans because I absolutely love macadamia, and they worked perfectly. I'm likely going to use this to make cup cakes next time.

Just made this with only the 1/2 of white swerve granular sugar AND the frosting I only used one bar of cream cheese, some vanilla and the same swerve granular sugar ITS PERFECT! I’m a huge carrot cake girl and this beats all the over priced carrot cakes from local bakeries! It’s incredible I highly recommend!
Thank you for the recipe. I just made this tonight and it turned out really well. I changed the frosting slightly and made it just with cream cheese, some Greek yogurt and maple syrup. The cake was fab.
OMG!! SO YUM! so easy to follow too! My batter ended up being a bit more liquidy than yours looked but it didn't matter in the end because it came out amazing! I used a 9 x 13 pan and cooked it for a bit longer like about 40 mins. The icing was my favorite keto icing by far!! and im not a huge icing person even before keto. I would suggest for folks who make with a 9 x 13 to reduce the amount of icing you make because i ended up with leftovers (which is fine i just used it for lemon cupcakes i made the next day). Anyways 5 stars & I'm subscribed now!

@@noelsturrup3817 the recipe came out excellent! I am shocked and how wonderful it tasted and I'm maintaining my recent 60 lb weight loss. In two weeks I'm going to make it again but I'm going to make a 9 inch version 2 layer that alone is a testament to how good it was. There was only one discrepancy the size of the pan that she actually using the video was a 6in rather than a 4in. Other than that it was all good
I used the frosting recipe on my vanilla swerve cake mix cupcakes. This is the best frosting recipe I have ever tried and I’ve made quite a few. I’ll have to make make that carrot cake, it looks delicious. Thank you for this wonderful recipe.

Yes. Using parchment on the bottom of your pans with any keto recipe in baking is KEY. Otherwise the baked goods do not fall out of the pan. Looks delicious! Definitely going to bake this!! Btw...4 inch cake, too cute! My hubby would eat this in one sitting. No joke.

Eating it right now. Made it in a square pan, came out fab, frosting on, walnuts on ( my own harvest) even my neighbour loved it. Used plain monkfruit, did not have any golden stuff, but it was great anyway. Thumbs up!
First off all, OMG I'm eating this right now and it's so moist and delicious i cant believe it... also, i don't know if it made a difference, but i sprayed my cake pan with so much avocado oil. Made the bottom so much more moist and amazing. Mm THANKS
I made this tonight but I made a few changes. I used Swerve brown sugar instead of the golden swerve because that is what I had. I also did not use cloves as I don't like them but I might try ground ginger next time. In the icing I added a little bit of almond milk to thin it down as I thought it was too thick. I also used a teaspoon of vanilla. And as I used erythritol confectioners and didn't want that cooling effect so I used a bit of liquid stevia with monk fruit to counter act it. This was amazing!! Absolutely delicious. I am going to try to freeze some of this and see how it fares. I will make this again for sure. Thank you so much!!

Recently put my whole family on Keto for overall health and longevity reasons (we’re all relatively lean). I was hesitant & nervous to try this out since I’ve never baked before & I was a bit skeptical about this recipe since I’ve had a few keto products that weren’t good at all. Well, I’m glad I gave this a try! It was relatively easy to make (although ingredients can be pricey). It was an instant hit for my dad who isn’t on Keto & hates cakes in general. I’m making this again next weekend 😊 P.s. I left my cake baking an extra 3 minutes, I used candied pecans and I used an 8 inch cake pan.

I love carrot cake and I just wanted to say I like your idea with shredded carrot but my mom when she used to make the carrot cake she got her aunt's recipe and she always used carrot baby food in the cake to give it a real nice carrot flavor
