Vegan Penang Asam Laksa
Serves 4
Spice Paste:
6 red chilies
6 dried chilies, soaked
4 red onions
4 cloves garlic
1/2 inch galangal
1 cm fresh turmeric
3 stalks lemongrass
1 tbsp fermented soy bean (taucu)
2 sheets nori
Tofu "Fish":
240g firm tofu
1 sheet seaweed
2 tsp kombu dashi powder - bit.ly/34HFUWf
Bake in preheated oven at 180°c for 30-35 minutes
Broth:
1.5 litres water
3 stalks lemongrass
1 bunga kantan (torch ginger flower)
1 handful daun kesum (Vietnamese coriander)
3 asam keping (tamarind slices)

1 tbsp tamarind paste
1.5 tbsp sugar

Salt to taste
Blended Spice Paste above
Tofu "Fish" above
To Serve:
Cucumber
Lettuce
Pineapple
Red onion
Fresh mint
Bunga kantan (torch ginger flower)
Red chili
Green cili padi (bird's eye chili)
Calamansi lime
