There is no such thing as "what's fresh that day?" in fish markets. All fish caught in the open ocean is immediately flash frozen on board the fishing boats, and thawed before they go to the market. If you ask him -"what's fresh that day?", he will think you are a moron, and unload the crappiest fish he has on you. Instead, become friends with your fishmonger and ask him what he thinks looks best out of all the flash frozen fish he has to sell.
I can't say that ultra fresh is always the best or superior to fish that has not just been take out of the water. Flavours develop as the fish remains out of the water. This can be a good thing.
You have to know what your do when cook,fry fish.try to get your fish need to be fresh, but not all the time.and check the temperature to see if you’re fish,or what ever you’re cooking.
