I always enjoys Sarah's videos. She always explains things in a way I really enjoy. The extra information of why she used the rice flour was treated. I am so excited to try this. Your headbands and your glasses are always so cute the way they play off your red hair!!!

Sarah Carey I am thinking the raw chicken is flying everywhere! The batter is dripping all over the place! I have serious salmonella fear and have abstained from everything chicken and meat. But this looks so appealing!!!! Any tips? I thought about wearing gloves but I still stress! Thanks!

Sarah, great job. Going to try it. If somebody could advise one day, do you keep all that oil and/or how do you save it. When you're single either you have to make a lot of chicken to justify that oil or it seems a tad wasteful. Any advice orsingle or couple recipes would be appreciated. ❤️

I can't get my oil to the right temp on my halogen hob, what temp should I set it to to heat up then stay hot enough?

I tried baking it after the first frying. They came out crispy and delicious. I threw in some Indian red chilly powder and chaat masala. AMAZING.

In my restaurant days when we made a similar batter, we found that cold water produced a lighter product, warmer water a darker product. Does the water temp affect this batter the same way? Also, what effect would using carbonated water have?

Wow. I really don't know. thats a good question, but we didn't try it. I assume, though, that the sparkling water would maybe make it more "fluffy" and tempura like

Using cold water would give you a tempura-like batter as well! Tempura uses cold batter (with ice cubes inside!) :)

I just made this chicken and its some of the best ever and I am a true southerner! So quick and easy to make without doing all that soaking in buttermilk and egg wash etc. I didn't have rice flour and ended up having to use cornstarch and it was still delicious. Can't wait to try it with rice flour.

You can put rice in a blender and make rice flour. Long grain rice works best.

@@barbra429 by the way, you can also use a coffee blender. Doing so in small amounts ensures you of a finer consistency.

potato and corn starch are used the most in Korean recipes. and double fry is also the secret.

Try it with YangYeom! The sauce made with Korean pepper PASTE, ketchup, rice/corn syrup/honey, and a bit of vinegar! It's the sauce what makes Korean Fried chicken so special.

Do you store and reuse the oil afterwards? I am afraid of deep frying anything because oil will taste bad in other cooking if I reuse it.

Yeah. I mean. it's never AS good as the first time. But i do. Generally you have to add fresh oil anyways. so it's pretty ok.

I'm wondering... what do I do with the oil after I've finished cooking with it? I know it can be re-used within a short time, but I don't fry that often. I currently have a couple of jugs of old oil that were used to cook fish in. How do I get rid of them safely?

I live in remote area in southern Alberta so there aren't a lot of choices for recycling. I'll have to check with the local dump to see if they take old cooking oil. Thanks for the tip. If I knew someone with a diesel engine, I'd give it to them to use. ;)

Ebba Lytle I live in Dubai, so I've just recently heard of the oil recycling. What you could also do is freeze it for later use (after straining it of course). Best way to dispose of it is to wait for it to cool then pour it back into the same container and throw it in the trash.

Potato Starch people. Potato starch.Not rice flour. I do gf for my son and trust me rice flour leaves a mealy feel. Korean chicken is done with potato starch. Fry it twice and its crazy crunchy.

I think it depends on the rice flour used! Glutinous rice flour is a no-no. Potato starch and corn starch works extremely well ;)

Cool it. Strain it and use it again. Then when it seems "dead" I cool it. Put it in a container and throw it away.

here's my kitchen conundrum: i use measuring cup, scale, thermometer & all that jazz still never got a perfect fried chicken my grandma never use any of those thing always make the best fried chicken ever 😐

Wet batter fried chicken is awful. It has a hard shell but the skin is not fried, you get the oily slimy skin under the hard batter. It's best to dry coat the chicken with flour and let it sit until the coating is moist from the liquid coming out of the chicken (need salt in flour). No need for double frying this way, just turn up the heat once the chicken is cooked. You know the chicken is cooked when the oil start popping because the water in the chicken is boiling, that means the internal temp has reached boiling point, therefore safe to eat.

Yes. Use a strainer, or spider, to retrieve the fish. Make sure the fish is chilled to start with; it will make it firmer, and easier to work with. Some like to use frozen fish that is cut into rectangular pieces. You'll just have to really pay attention to your oil temperature.

Yeah,I was watching Maangchi's channel and that's what she did, just coated the chicken in potato starch - no batter. But then she coated the cooked chicken in a spicy sauce, so I guess perfect golden brown colouring wasn't an issue.

Tomah cukes are too full of water and will eventually just absorb too much oil. something delicate like I would do in a simple tempura batter.

Sarah has a face only a Mother could love. I don't think I've seen a woman who almost purposely goes out of her way to appear Unattractive as Sarah seems to in her Videos. NO wonder people are hoping for Thomas Joseph.
