Yes, there are a few mechanics in DS3 that can give you refills of Estus; I forget when it got added in or if it was always there. 1) There is a hidden gauge that fills up as enemies die [you don't have to kill them], once filled it will restore an Estus 2) If an invader dies in your world, that will refill an Estus 3) If memory serves you can also get an Estus refill if you leave a message in the world, and someone rates it

Darkwraiths always give 2 estus refills if they give any, and there are two storming the road up to the Abyss Watcher's fight, so I can only imagine that somehow one of the darkwraiths died near the end of the fight.

In Dark Souls 1 you can only be cursed once, unless you somehow play the Day 1 version, in this case you can be cursed 4 times
