Does the alcohol In the toddy move away out completely in the steaming and fermentation process ? Concern as if it has alcohol may not want to give it to kids ...
Thanks for the recipe, Wendy. Mouthwatering. Reminded me of my childhood days. My mama made sannas, using fresh palm toddy and coconut milk. She insisted on using coconut milk. Today, many do not know the difference between sannas and idlis, like appams and dosas.
I’m sure the sannas your mum made must have been delicious 😋 my grandma always used fresh grated coconut and toddy that came from her coconut plantation in Goa. And yes a lot of people mistake one for the other.

Assalamalaykum. Thankyou Wendy. I also make Sannas especially on Eid. You can make different colours by adding colouring, yellow,green, pink etc,etc. I have never tried the Sanna with jaggery but I will most definitely give it a try.
The best thing is you fabulous method ofmaking toddy at home I me going to do this and add it to sannas and appams shall tell I how it comes out All ur recipes r superb and favourites with my family Thanks wendy

Wendy also you can use cucumber for the sweet sannas batter. You can blend the cucumber (no water) seperately and then add it in the batter. It tastes even better. Try it. Actually large cucumbers called taushay in Konkani is used. Since its only found in maharashtra u can use cucumber.
So well presented Wendy. Curious as to how long the toddy stays fresh for. Not sure if it has to be made 24 hours before making the batter. Don't want it to spoil if I make it two days before making the batter. Let me know

Phenomena, I have not tried making sannas in an instant pot but may be you could give it a shot. Make half the batch as a trial one. Would love to know how it turns out 😊
