What could be a better appetizer than pickled herring! You can simply season it with onions, add some boiled potatoes, and there you have a ready meal.
But you can also make something delicious from pickled herring!
Herring Pâté, aka “Forshmak”, is considered a traditional Jewish dish. No one knows whether this is true or not. Presumably it was originally borrowed from East Prussian cuisine where it was made of fried herring or minced meat. Once borrowed it has been very successfully transformed into a wonderful cold appetizer that we love so much. They say this happened thanks to the Jews of Odessa!
It is often made with chopped herring, but in our family all the ingredients go through a meat grinder. However, everyone has their own preferences.
Ingredients for pickled herring pâté:
Pickled herring fillet - 250 g
1/2 green apple - 150 g
1 small onion - 100 g
1 egg
Bread - 70 g
Apple cider vinegar - 1 tbs
The second dish is an essential element of a festive table in some countries, an appetizer called “salted herring under a fur coat”
Ingredients for pickled herring salad:
Pickled herring fillet - 250 g
Potatoes - 400 g
Beets - 300 g
Carrots - 100 g
Onion - 100 g
Dill - 50 g
Homemade mayonnaise (without raw eggs):
3 boiled yolks
Milk - 100 g
Vegetable oil - 200 g
Lemon juice - 2 tbsp
Granulated sugar - 1/2 tsp
Salt - 1 tsp (level)
Mustard - 1 tsp
