The most Finnish food ever - Karelian pies!

Karelian pies (Original from www.martat.fi/reseptit/karjal...)
Crust dough
3 dl water
2 spoons oil
2 teaspoon salt
6 dl rye flour
2 dl wheat flour
(first, we did just half of this, but it was too little!)
Filling
2 ½ dl water
2 dl rice
7 ½ dl milk
1 teaspoon salt
1 egg
butter and water
boiled eggs and butter for egg butter.
Preparation of filling:
2. Stir the rice in boiling water and cook for 10 minutes.
3. Add the milk and let the porridge simmer for 30 minutes, stirring along the bottom. Leave the filling to simmer on the lid for less than 10 minutes.
4. Season the finished porridge with salt and let it cool down.
5. Stir the egg into the cooled porridge.
Making pies:
1. Mix cold water, oil, salt, and flour with a wooden fork. Knead the dough smooth and firm.
2. Sprinkle the rye and wheat flour mixture on the table and pour the dough over the flour. Roll the dough into a plate about 1/2 cm thick.
3. Press the cakes from the plate with a drinking glass.
4. Place the cakes in stacks of six to prevent them from drying out. Cover the stacks with a plastic bag or bowl.
5. Roll the dumplings with a rolling pin into a thin round or oval shells. Put the crusts on top of each other and sprinkle with rye flour in between. Cover the stack of crusts with a plastic bag. Fill the crusts as soon as possible so that they do not stick together.
6. Take the crusts to the baking table, spread a spoonful of the filling in the middle of the crust (1 cm thick layer of filling), and leave a space of about 1 cm at the edges of the crust.
7. Turn the opposite edges over the filling and wrinkle the pies with your index fingers.
8. Transfer the pies to a baking sheet on baking paper.
9. Bake the pies at 275-300 ° C for about 15 minutes.
10. Grease the pies with melted butter mixed with a drop of water.
11. Stack the hot pies in a bowl on top of each other and cover with baking paper and cloth.
Eat with egg butter!

I like Anni's accent, but I especially like the sound of Anni's actual voice. To me she sounds very clever and sharp, but not pushy or bossy. She also somehow manages to sound brave and adventuous while also soft-spoken and even a little shy all at the same time. It's very unusual. I really like the way Anni speaks - there's more to it than just her accent.

Wow! I feel like every culture does pretty much the same things. Everyone has a dumpling/pierogi. Everyone has a bread. Everyone has a meatball. Everyone has a cheese. But THIS, this is completely unique! I've never seen anything quite like this. Can't wait to try making it!

I was first introduced to these amazing little savory treats the first time I ever visited Finland (and thus far only time but I will be back) and I found a recipe that I've used for 7 or 8 years but I've always struggled with the crust part- my circles were never consistent and the dough too sticky, and I never could get the crimping on the edge right- and the rice porridge center was too loose for my liking and I often filled them too thick but seeing the trick with the drinking glass for the dough circles and a couple of other things you two did just in putting them together and it's like a lightbulb went off in my brain! Thank you so much for sharing all the cooking videos but especially this one.

This all reminds me of my grandmother. She was born in Finland moved to canada in the 30's. She used to make these. You guys should make pulla next :)

Love Karelian pies..have enjoyed them in Finland.. and have made them with my Finnish mother abroad. So tasty. My mother makes them with the rice porridge, the potato, and even sometimes with the carrot version. Great video as always Anni..Moi and Terve from Panama.

Look very delicious! Much better than a regular/average karelian pie from the supermarket. I think the difference is the amount of rye flour (much more in these). Need to give these a go some time.

Love Karelain pies! Not been to Finland in about ten years but I still hanker after them. That and Fazer Salmiakki chocolate bars. Despite my user name I'm not Finnish but the country and it's people have left its mark on me 😊

i have seen a lot of Finnish people, youth and heard them speaking... This by far is the Most Suomilainen thing i have seen in a really long time! the only thing that was missing was beer and a free Perkele :D
