Not just burgers, either. My high school vice-principal (whose last name was Grassi, and claimed Italian heritage) hated pizza. He said he couldn't figure out how this "Depression food" became so popular. He said it was developed as a way to stretch another meal out of assorted old leftovers, and he had his fill of it growing up.

@SmokyRibsBBQ

Chad Parker (friend) wrote and sang the song. The music tracks were actually done in Nashville by studio musicians. The drummer is William Ellis from Montgomery Gentry, Pat Lassiter from the Tracy Lawrence band, and I can't remember the others but one comes from the Gary Allen Band. Chad knows all these guys and hooked me up big time. That's why I still leave the theme song up and running.

Food Wishes video for this burger showed up in my feed today, and the picture looked damn tasty, so I checked it out. Of course, George's video showed up in my suggestions on that video, so I watched it, too. So I did a web search and (of course) Wikipedia had an entry for the burger. According to them, Mr. Weeks had the local butcher(s) who supplied his meat grind it with the bread crumbs, which was interesting. Another thing that I find interesting -- and you're the only person that's mentioned this -- is that my grandpa would use the term "plug nickel", so I kinda caught on to why this burger was called a "slug" burger pretty much by the date Mr. Weeks started selling them.

Man, I saw this video and thought about sitting up a Week's here in Booneville, Ms. Willie Weeks ran that little tin building on the corner for years! He would treat everyone like family, and sit a while with anyone that would stop in! He didn't mind to correct you if you messed around and called them a "slug burger" they were Week's burgers! Best dang burger around! He passed away about a month ago.

I like skillet burgers with crushed saltine crackers mixed in with dehydrated minced onion and beaten egg, black pepper, salt, and worcheshire. Using extra fatty grind will be best but 80/20 works too. It may sound bad but the cracker and dehydrated onion soak up the moisture and grease, the egg creates a seal reducing moisture loss, plus using a skillet fries the burger in it's own grease but I'll usually spoon some off if I have to do more than three or four. If you then steam the bun above the burger in the skillet under a piece of foil it'll pick up some more fat making it even more ridiculously greasy. My Mom used to make weeknight burgers like this to stretch the ground beef out along with hand cut potatoes either oven fried or fried in a pan. If you have people that aren't into red meat but turkey instead rehydrate the onion or use fresh because they usually need a little help with moisture. The Slug Burger has some history behind it but people have been padding ground beef with bread and cracker meal, even flour and cornmeal all over this country for a long time. It has a name and now they are using soy flour and pork... Cheer's for doing an original!

There are variations of course. In Tupelo there was a place called Dudie's that made them from their own recipe for decades. When Dudie's closed the recipe was picked up by Johnnie's and are still sold there today.

Getting the edges of the burger crusty seems to be what you're going for which would lend to both the taste and texture.
