come ho sempre detto ogni volta che l'ho presa quando lavoravo all'europeo,prendono una carne troppo pulita e con poco grasso,non a caso ci mettono molto poco a cuocerla rispetto al tempo classico per una picanha e rimane subito stopposa se non mangiata ben calda. Ma per la fiera dove non si ricerca la tradizione e la perfezione va più che bene....
