🔺 Recipes:
Zucchini Oatmeal (1 serving)
1 cup water
1/2 cup rolled oats
1/2 cup shredded zucchini
1-2 dates, pitted & chopped (or sub another dried fruit like raisins or another sweetener like 1 TBL maple syrup)
1/4 tsp. cinnamon
1/8 tsp. nutmeg
Pinch of salt
Optional toppings: plant milk of choice, pumpkin seeds and dried cranberries
Boil water and add oats, zucchini, dates, cinnamon, nutmeg and salt. Reduce to simmer and let cook for 10 minutes. You can also double/ triple this recipe for meal prep as it reheats very well. Enjoy!
Chocolate PB Zucchini Smoothie (1 serving)
1 cup chopped zucchini
1 frozen banana
2 cups soy milk (or another plant milk or water)
1 scoop chocolate protein powder
1 tsp. amla powder (optional) amzn.to/3Pb37VJ
1 tsp. spirulina (optional) amzn.to/3OVPrwm
1+ TBL cocoa powder
1+ TBL peanut butter powder (I like this one: amzn.to/3PeeCf0) or sub regular peanut butter
OR simply add 1 handful zucchini cubes into your current favorite smoothie for an extra veggie boost.
Zoodle Salad (1-2 servings)
1 zucchini, spiralized (amzn.to/3EfAb8S)
1 large carrot, spiralized
1 cup green cabbage, roughly chopped
4-5 green onions, sliced
Optional: handful of chopped cilantro (I was all out, but this adds a great flavor to this salad!)
Optional: add some sliced baked tofu or vegan chicken if desired
Top with crushed peanuts or cashews
Peanut dressing:
1/4 cup peanut butter
1 TBL low sodium soy sauce
1 TBL vegan fish sauce (amzn.to/3qW6sOZ) or sub an extra TBL soy sauce
Juice of 1 lime
1 TBL white vinegar
1 TBL maple syrup
1/4 cup water
Simple Soup (1 serving)
2 cups veggie broth (I like to use this Better than Bouillon amzn.to/3YU2uTR, that way I can add a bit of extra paste for more flavor if needed)
1 cup chopped zucchini
1/2 cup chopped green cabbage
1/2 cup chard or baby spinach
1/4 cup frozen corn (or any other frozen veggies you like)
1 cup tofu cubes
Bring broth to a boil and add all veggies and tofu. Let simmer for 5-10 minutes, until desired softness of veggies is reached. Taste broth and adjust seasoning if needed (you can always add a pinch of salt, pepper, chili flakes, splash of soy sauce, etc.)
