I'm jamaican also, and I agree with this statement.

No matter who you are, ALL food in the restaurant must be cooked fresh every day.

I'm indian and I totally agree, my mom literally cooks 2 meals a day

I'm mexican and I also agree! Just takes time for certain meals, but why not? Fresh is best.

if she was making a point about the ingredients, I would understand. some ingredients just take ridiculously long amounts of time to prepare, to grow, to ship. however to say that it can't be done every day, and then just not, oh I don't know, order fresh fucking ingredients *all the time* when needed, is just bad ownership. and it's disrespectful to the very culture she wants to empower, if unintentional.

I think what she means is that some foods can't be cooked every day. Simple foods like chicken can. However, kidney beans for one of jamaica's most famous dish "Rice and peas" can't. The beans need to be soaked overnight and most people let meats such as oxtail, goat, etc marinade overnight as well.

@@shantalle.8888 that’s why I’m culinary school you learn to have mise en place and prep everything out as far as you can. we have to take food safety classes also so we learn what meats can be left seasoned and ready to be cooked when the order comes in. versus sauces/dressing that have to be thrown out after a couple hours

Pretty sure u can cook stuff fresh every day even if it takes days to prep. You dont wait for the food to get eaten before you start to prep more. U just keep prepping days ahead so each day there is some ready to go.

I won't even eat microwaved leftovers at home. My wife eats them. I cook fresh dishes each night, even if it is burgers or a quick stir-fry.
