Bak kwa, or 肉干 (rou gan), is a salty-sweet dried meat snack similar to pork jerky. The meat snack is cooked over charcoal fire so that when the oil from the meat drips into the charcoal, it produces that smoky fragrance. Bak kwa was brought to Singapore by Chinese immigrants, and has since seeded itself as a must-have snack during Lunar New Year.
