Koshari is Egyptian Vegan Street Food and the National Dish of Egypt. I'm going to show you how to make the best koshari in the world. Better than you'd find it on any street corner in Cairo.

Ingredients:
1200g (42 oz) Chopped tomatoes
250g (8.5 oz) Brown Lentils
250g (9 oz) Ditalini Pasta
225g (8 oz) Dried ChickPeas
175g (6 oz) Medium Grain Rice
175g (6 oz) Vermicelli
8 Onions
2 Heads of Garlic
1 Tomato
1 Lemon
10 Tbsp White Vinegar
6 1/2 Tsp Salt
6 tsp Ground Cumin
1 1/2 Tsp Black Pepper
1 Tsp Cayenne Pepper
1 Tsp Ground Coriander

Directions:
To make the chickpeas
1. Soak your dried chickpeas overnight in a large amount of water
2. The next day drain your chickpeas and in a large pot boil a large amount of water and add the soaked chickpeas
3. Add a plum tomato, an onion sliced in half and 2 cloves of garlic to the pot
4. Add 1 Tsp Cumin, 1 Tsp Salt and 1/2 Tsp Cayenne to the pot and leave to boil for 1-2 hours
To make the Lentils
1. Add 2 litres or quarts of water to a pot and boil
2. Add 1 Tsp Salt and 1 Tsp Cumin to the water as well as your lentils
3. Boil for 30-60 minutes until cooked through but not mushy (aldente)
4. Strain the lentils using a colander, and keep any lentil water for later
To make the Tomato sauce
1. Add 4 Tbsp of Oil to a sauce pan on medium high heat
2. Mince 10 garlic cloves and fry in the pot for a few minutes until fragrant and bubbly
3. Before the garlic browns add 4 Tbsp of White vinegar and deglaze the pot
4. Add 800g of Crushed Tomatoes or Tomato Passata
5. Season with 1 Tsp salt and 1/4 Tsp Pepper
6. Allow to simmer for 20-30 minutes until thickened
To make the Spicy Tomato sauce
1. Slice a green chilli into thin circles
2. Add 4 Tbsp of Oil to a sauce pan on medium high heat
3. Mince 5 Garlic cloves and fry in the pot with the chillis for a few minutes until fragrant
4. Add 2 Tbsp of white vinegar and deglaze the pot
5. Add 400g of chopped tomatoes and simmer for 20 minutes until thick and chunky
To make the Dakkah, Garlic Vinegar sauce
1. Mince 7 garlic cloves and add to a jug
2. Add 1/3C White Vinegar, 1/3C water and 1/4C Lemon juice
3. Add 2 Tsp Cumin, 1 Tsp Coriander, 1/2 Tsp Cayenne pepper and 1/2 Tsp salt and mix to combine
To make the crispy onions
1. Slice your onions into thin strips against the grain of the onion
2. Place in a large bowl and add 2 Tsp Cumin, 1 Tsp Black pepper and 2 Tsp salt
3. Mix thoroughly until all the onion strips have been separated from each other and let sit for 30-60 minutes
4. Add frying oil to a large pot about 1.5cm or 1/2in deep, when hot add the onion in batches
5. Fry for 8-12 minutes per batch until Golden in colour, remove and place on a paper towel lined tray, they will continue to darken after removing.
6. After a few minutes on the tray, move to a second tray with clean paper towels so they do not reabsorb any oil
7. Fry all the onions except a handful
To make the koshari base
1. Wash your rice till the water runs clear and allow to dry for at least one hour
2. Remove all of the oil from the pot you fried the onions in, except 1/4C
3. Fry the handful of onions that you kept aside till lightly browned
4. Add in the vermicelli and fry on high heat for 2-3 minutes until golden brown
5. Add the dried rice to the vermicelli
6. Add a few large Tbsp of the regular tomato sauce to the pot
7. Add 3-4 Tbsp of Dakkah to the pot, mix well
8. Add the lentil water to the pot, and top up with water until the rice and vermicelli are just barely covered
9. Bring the pot to a boil and cover, once water has evaporated from the pot turn the heat down to low
10. Allow to steam for 20-30 minutes
11. Cook pasta in heavily salted water till Al dente
12. Add the cooked pasta to the rice and vermicelli in two parts and mix till evenly combined
To plate the Koshari
1. Add a generous serving of the koshari base to a platter
2. Spoon over the tomato sauce across the koshari base
3. Add a few Tbsp of the Dakkah over the top of the tomato
4. Sprinkle some of the cooked chickpeas over the top of the dish
5. Add fried onions to the dish
6. Serve the chilli sauce on the side and Enjoy

I’m not sure what I was thinking when I set out to make this, especially with a newborn and a toddler running around. But man did it pay off! I thought it was going to take a long time to cook, but I spent maybe 40 mins actively doing things. The chick peas were a great snack for said toddler and it felt like magic to put everything together in the pot at the end. Another 10/10 from my otherwise picky eater family. This is going to become a regular dish!

I am amazed you managed to make it in 40 minutes of active time, can you teach me?? It usually takes me about a good two hours of active time 😂. @@MiddleEats Yea I'm saving this for a holiday or weekend when I have all week to shop for, think about, and prepare parts of it. Seems to me that the chickpeas and lentils could be cooked a day or two in advance, also the tomato sauces.

So I made this dish yesterday. Started cooking with a clean kitchen at 315, prep work went on forever finally served ar 7 pm.. The final step of having the base come out not mushy and not dry was nail biting. But at the end my family loved it and my daughter in law asked for the recipe. I will be making more of your dishes. Haha that's the issue with koshsri, it takes so long and uses up every pot. It definitely is worth the effort though, my rule is someone who wasn't cooking does the washing. I know right, but I'm happy it turned out good. Glad to hear everyone liked it and I hope you try more of the recipes.

It's really rare-nearly impossible honestly- to find a real authentic recipe from non locals..most of what I found end up being something similar or a modified version but not the same thing As an egyptian living in Egypt this is 100% authentic and original with all the tips and secrets our mothers use. Very satisfying to watch every little detail being done correctly and explained. Thank you!

wao someone must have had a lot of fun while transforming Kichri to Koshari. Khichri is mainly a comfort food and made when a person is sick. This looks like a feast.

I went to Egypt for a 4 months Internship 5 years ago and used to eat koshary almost every day. It’s was cheap, a great source of veggie proteins and delicious. I missed it very much when I came back home, in Brazil, and it was a disaster when I tried to cook it at home, mostly because I didn’t find a good recipe on the internet. I’m gonna try your recipe because it looks delicious!

For the onions, after I chop them, i mix them with one table spoon all purpose flour and it comes our crunchy, no extra effort, just keep it on low heat

ok so I don't have the time yet to make the full dish but I made the tomato sauce and the chickpeas and ate them over rice and it was soooooo tasty! can't wait until I can make the whole thing one day :) also I love how you split the video up into chapters with timestamps in the description, makes it so easy to flip back and forth between sections for easy reference. love this channel!!

You can try popular Indian dish "chhole chawal" (meaning "chick peas dish served with steamed rice") or "rajma chawal" (meaning "kidney beans dish served with steamed rice"). These are very delicious dishes and a great vegetarian/vegan option

Yeah koshari is so insanely cheap but such a great meal. I think quality tends to differ from vendor to vendor in Cairo, but this recipe is amazing every time. Like you said it's a lot of work, but it reheats great and if you could get some friends together, it makes a good sharing dish. Thanks for watching. Yeah! Our other go to good was shawarma from a place called Baraka on Zamalek. It had toum on it, which I've only had a couple times in the US, but the toum was what made it so good.

I miss real shawarma so much. My plan for the 1000 subscriber special (when I get there) is a full on Syrian shawarma feast. I'll be making the bread, the Toum, and the chicken shawarma. Hopefully it'll be soon!

I think part of the difficulty in replicating the dish is you honestly need that greasy, grimy Cairo kitchen that's had about 1000 tons of oil fried in it and about 10000 tons of salt poured over it for that just eight taste! Love this channel!

Thank you, Thank you. Thank you! I visited the Middle East for 6 months in 2000. I ate a whole lot of Koshari on the Red Sea coast and all around Egypt. It was cheap, filling, delicious and so very memorable. I wish there was a place in my hometown, of Vancouver, Canada, where I could easily get some authentic Koshari to go but there is not (I don't have a car). Now I can make this amazing dish whenever I want I just won't have the company of Egyptian women and kids whilst I eat it. I just found this channel today and I am so pleased! I like that you are actually showing layers to recipes, sauces that can be used for other things, and sharing useful techniques. Stupidly, I had never thought to cut an onion in half before peeling... huh. Your videos are getting me excited about food again. I've been so bored with cooking lately. I feel like I make the same foods all the time, or spend a lot of time making something different that is just eaten up too fast. I have watched so many koshari recipes online and this is the most authentic one by far. People don't realize how you have to season and take your time with each component like you did in this video. So many other bad recipes don't properly season anything but the sauce. it's upsetting. thank you for sharing Egyptian food properly with others

But maybe I will do a video too :) I make only gluten free vegan dishes so I made some slight alterations like using gluten free capellini noodles broken up instead of vermicelli etc. This is such a great filling recipe more Vegans should know about it. Also I'm not gonna lie I only made one of the tomato sauces not both , LOL :)

Ya habibi come on now, we do not mix the lentils with the rice. We cook everything separately and layer it at the end.

First time I've heard of Koshari, but I will try this fabulous dish for sure very soon (and send you a picture)! I seriously have to tell you; this is one of the best vegan dishes I ever made... especially the Daha (if that is the way it is spelled) makes it so savoury..... Thank you... it took some time for me to prepare, but it was so worth it.

I Watch a lot of cooking videos and yours and your wive‘s is one of the best, because you explain the process really well. For example you always say the exact amount of ingredients that one should use in the video, something that other cooks don’t do, or ypu explain cooking techniques super well. Thanks a lot for that. I've heard of Koshari before but I would have never guessed that it was inspired by Indian kichidi,they seem like such different dishes to me. Going to try this soon! This is my favorite channel for Middle Eastern cuisine.

Made this recipe yesterday! It was my first time trying koshari so didn’t know what to expect but I’ve tried some of their other recipes before and they all have come out perfectly this one included! Just a few things I changed but I didn’t add the lentil water to my base as I didn’t want the earthy flavor of the lentils in the rice so I cooked it in some seasoned vegetable broth. I would do a little less vermicelli as the rice kind of got lost in all the pasta. Also onions let out a lot of moisture be sure to have a lot of clean kitchen towels available.
