Fun fact …canola oil is rapeseed oil . They used it in world war 2 in Canada for the army equipment as engine oil and other lubricants . It was far too acidic for human consumption so after the war they figured out how to lower the acid and canola was born. Canada,Oil,Low,Acid is whaCANOLA stands for . It’s horrible

If you open the cream cheese and put it in a bowl with a lid, then set it out on the counter until it softens you can avoid the "blend and scrape, blend and scrape, blend and scrape" completely. It stirs right into the sour cream with a spatula. The opening before leaving on the counter is only recommended because the foil seal is hard to remove after the cream cheese is soft. Also, if you add a packet of ranch seasoning into it the resulting product can be mixed with boiled egg yolks for a stellar deviled egg.

This is an an intriguing recipe. You can also make mayo with grass fed butter or using half butter and half avocado or grape seed oil. I’ve done this and my family loved it. @1rayne
@1rayne 7 месяцев назад
@@randomroses1494 yes, that is true about seed oils. We tend to go through it quickly enough not to have a problem. But I can’t argue about butter. I did make mayo with all butter but it didn’t have the consistency of mayo. It hardened up a bit in the fridge. If you leave out for a few minutes it softens up. I chose the half grape seed oil and half butter because my mom doesn’t like any other oils and was ok with the grape seed. And it was a bit closer to the mayo texture. I was just experimenting to find a happy ground for everyone.

It firms up a lot in the fridge but I don’t mind. Supposedly you can use more egg yolks to keep it from firming so much, but I haven’t done that. I use Steve’s (seriousketo) method for pasteurizing the yolks so it lasts longer. Works great for my family. I don’t do much dairy anymore, but I will try this recipe for my kids. @Shitfarmer86 noone said they had a problem with using mayo did I say that? No but some of us have a problem with the rubbish that companies put in shop bought mayo.... There is different versions of mayo I would use raw eggs in different versions of mayo plus you use raw eggs in Hollandaise sauce etc. I was just sharing how my grandmother made it before the concept of carnivore was even a thing 👍

@Shitfarmer86 by the way if you can find mayo and creamed cheese without rubbish in it you are lucky there is none here in Australia which does not bother me because I like to make my own foods where possible. 👍

@@cinystarr4657 what I have found is my taste buds have changed I was not a big sugar eater before I went carnivore/animal based and I had not done dairy for near on 25 years.... it took a week or so but I find butter super sweet and add it to everything including my black coffee. I can't do actual milk still 🤢 I tried kefir and don't like it but I will make yoghurt from the milk and cream, I use good butter and high fat good quality cream in my sauces/condiments, you should try butter, cream, brie cheese and mustard blended together it's great! I don't have a fridge per say I let mine get fermented and funky but that's how I like things 👍

I tried this recipe and I can with absolute certainty say, it's sooooo MUCH better than mayonnaise! I saw all the recipes for homemade mayo with a raw egg and being incredibly squeamish about raw eggs, this was something I needed to try. I just blended everything and left it in the fridge for a couple of hours. Perfect consistency and perfect taste. Thank you for the recipe!

I generally make mayo. Either Baconaise or with high quality EVOO (which is one of the few non-animal fats that doesn't make me sick). It's not always quick or convenient to make depending on what else is going on in my kitchen; better to remake and store in a jar for a recipe I'm making later. This seems a lot simpler since you don't need to perfectly time the emulsion on the mayo and I'll have to try it.

Use a bowl and an immersion blender! Much less cleanup! I make eggs and cream cheese pancake batter (2 eggs, vanilla, liquid artificial sweetener, guar gum, 8 ounces cream cheese) in a bowl using an immersion blender and it’s way easier than using a regular blender. In fact, I use the immersion blender for nearly everything except when I need a really smooth consistency resulting from grinding up something very thoroughly.

I sub full fat, unflavored Greek yogurt for sour cream in all my sour cream ingredient recipes. It is denser. I also use lemon juice powder (readily available in markets) vs the liquid when making a dip that I need to be thick. Edit: Greek Yogurt is higher in protein, lower in fat & calories v.s. Sour cream. (Greek yogurt IS a bit tangier than sour cream.) Cottage cheese can also be pureed and used in place of yogurt or sour cream. It is the highest in protein and lowest in fat & calories. I find that the large curd is best. I drain the liquid with a strainer saving the liquid for recipes calling for milk. I have found the wallyworld brand (greatvalue) to be the most user friendly. It has a softer curd of all large curd varieties I have tried. I absolutely never buy the small curd; it is detectable- almost gritty. Happy eating! Note: when subbing cottage cheese in place of sour cream in hot dishes it will add a slight thick, stringy cheese texture to your finished recipe. (Example...I sub straight (not pureed) cottage cheese for milk in scrambled eggs, or milk based soups, etc...it has a very very slight string. I like the added effect. Protein protein protein!!!)

You can make a homemade mayo with avocado or olive oil. So creamy and tastes great! 1 egg room temp, 1 tbls lemon juice, 2 tsp white vinegar, 1/4 tsp powdered mustard, 1 total cup oil. All of the ingredients but only a 1/4 of oil, then blend. As you blend, slowly add the rest of the oil. You can see/feel it thicken. It is really good. Another alternative to store bought mayo that has soybean oil in it. I can't wait to try your recipe!

It’s really easy even without a blender. Just place a folded towel halfway under a plate so that it is slightly tilted and beat the ingredients the right order thoroughly from the wrist with a whisk. Just remember to pour the oil slowly. Replacing lemon with lime is also great. I'm not on a carnivore diet myself so I vary with ingredients such as garlic, turmeric, black pepper or herbs such as sage, lemon thyme, lavas, marjoram, basil or fresh parsley etc.

@kahlalivelsberger3908 the second part of the oil needs to be poured in slowly. I do use the mustard powder. I tried it with Dijon mustard, the liquidy kind, and it didn't work/taste as well.

Manufactured mayo is very toxic, because of the oils they use. Even organic canola is still bad. Super easy to also make homemade mayo from and egg, 1/2 c bacon fat and 1/2 c avo oil, 1 tsp mustard and salt and pepper and use and immersion blender. I do mine mostly with all avo oil. I do crunch with chicken thigh skins. I remove them before cooking the thighs in the instapot to make chicken and broth. Air fry them and they're so crunchy or I do pork fat I get for $1.99 a pound and air fry that and it's amazing and sometimes my meal. Pork belly is also great and can get very crisp, bonus, you get all the fat to pour off to your grease jar for cooking everything else and you never even have to buy oils. You should try powders instead of granulated onion and garlic, they help to thicken sauces etc ad the flavor is better. Will try this recipe, wonder how it freezes?
