Something I've done is add garlic cloves and/or onion petals to the pan to dry, giving a tasty seasoning mix.

Fermenting them peppers into a hot sauce is the best, also drying jalapenos and grinding into powder is good

funny story... a few years ago I processed a bunch of hot peppers and knowing the oils get on your skin i washed my hands really well. later that night my GF and I starting fooling around and the next thing you know "did you wash your hands after those peppers?". LOL needless to say, that was a quick end to the festivities for the evening. I now wear latex gloves when processing hot peppers. maybe a good topic for row by row? HAHA

I highly recommend a dehydrator - I also dehydrate green peppers, onions and celery. It really cuts down on the waste and if you vacu-seal your mason jars, they'll keep for years!

Have thought hard about getting a dehydrator. Just run out of room sometimes for more kitchen gadgets.

I like to dry them in my electric smoker. Use a little apple wood set it at 190 until dry usually around 6 hours. Adds another layer of flavor to them.

For grinding I like a coffee grinder dedicated for grinding spices. Also, a mortar and pestle is good for some exercise.

I've done the low oven procedure and it works. I usually grow 5 plants that yield on avg 500-600 peppers. They plants I buy each year grow about 4'. I place them as they mature in the sunroom and let nature dry them. I usually end up with about 4 large jars of flakes that I share as gifts to friends in small small mustard style jars. Heating the peppers in the oven, intesnsifys the heat.

Aged red pepper flakes should be a thing. They get less hot and more flavorful in taste. Should be like fine wine.

@gardeningwithhoss
@gardeningwithhoss 5 лет назад
If the peppers have a thick wall, like a jalapeño, they don't dry very well. Bananas are thin so they might would work.

You can use any type of hot pepper as long as it has a thin wall. Thick-walled peppers like jalapenos don't dehydrate very well.
