Making Shrimp from a ROOT... the burdock root!
I had a bunch of people ask me to try the Burdock root! In my research I came across Seasoned Vegan Burdock root crawfish! Now from what I understand they are absolutely doing something special to get their Burdock root to tastes just like crawfish ( I have my ideas about what that is )
But anyway! I knew I could make a soft chew out of the root with a nice lite seafood flavor to make some epic vegan shrimp!

A couple things of note with burdock root, as we use it in a lot of dishes at the ramen shop I worked at. We would boil it to soften it up just a little bit then cook it off in soy, vinegar, and sugar and reduce that and deglaze with sake BUT the water you boil it in when reduced makes a really lovely syrup that I don't have any comparison for, it's like an earthy and light molasses. It's rather sweet. We used it in some mixed drinks and in our house made gochujang for some natural sweetness

Fun fact in England we make drinks out of dandelion and burdock I don't know if it's the same in the US but it tastes lovely you should try. Great video I would love to try this

There is burdock growing all over my yard and I tried digging some up to grow in the garden last year. But lost my mojo with the pandemic malaise. This year I will try again. There might be burdock un-shrimp in my future!

@EggX-94 I think it would be very helpful to stop saying “ protein “ when what we mean is in fact meat, because doing so reinforces the idea widespread (but false and armful) idea that plants are not protein sources... Thank you for the animals 😊

@@carinecampier meat is the traditional source of protein. I don't think their comment suggested it was the only source, just that a lot of people are stuck on the meat and potatoes style of cooking.

Shrimp is something I used to like . I do not miss all the mercury and toxicity !! I will love to try this especially since I usually have leftover ,unused Burdock in the fridge and because I bought seeds to grow it again !!!❤❤❤❤Sounds like a great recipe !!!!❤❤❤❤❤

I'll be trying this but without the vinegar/pickling element - infusing flavor before simmering was a cool idea, but I'm thinking I'll do what I do with king oysters when making scallops, which is simmer them in a highly flavored liquid that includes a little white wine, caper brine (splash only!), sea weed, water, till tender, versus soaking in anything first. Not sure about the sugar element... Maybe I try your way with half, and something else with the other - I dunno! This is so fun, anyhoo. I have alerted my mother that this test is COMING SOON. Also - I'm always watching your vids on my TV youtube app so I never comment - but have it up on the computer this afternoon and wanted to say that I REALLY LIKE THE TASTE-TESTING. The framing in a different spot is good, the conversation, I say TWO VERY ENTHUSIASTIC THUMBS UP to the new endings :) Oh, and: I'm all accustomed to hearing you say "wet batter" and "dry batter" now and it doesn't bother me, but in case you ever need to know, for like when you get a guest spot on a TV show or something, this kind of breading method employs a wash (as in egg-wash) and a dredge (as in flour dredge), sometimes a crumb dredge thing as well. There's probably some other acceptable terminology I'm not thinking of, but it's not actually "batter" (either part). Batter is a thicker, all-in-one application, whether describing the stuff that'll be making a cake, pancake, or muffins, or else something like tempura coating.

So cool what plants can do!! I'm pretty sure I had some sweet and sour shrimp made with this at a vegan Asian restaurant in Vegas. I asked the waitress what they were made of because the texture is INCREDIBLY similar to shrimp (it's almost unbelievable) and she said they were made from a certain root vegetable (she didn't know the name).

it is very healthy which is why I would not boil it for an hour. Burdock root has a lot of healing properties, which he completely altered by boiling it like that.

I do love recipes that make the most nutritional use of the ingredients, and I would love to look up recipes if you have any good dishes you like and could recommend! I've only seen a handful of recipes, but they look and sound so tasty!

Instead of the overnight soak, why not just boil for an hour in the brine? That boil had to have removed a lot of flavor?

I wonder if you could use a tempura batter, that way your guests might or might not think it's shrimp. If they don't think it's shrimp, you can always say it's tempura veggies.

I went to my favorite Asian market to look for burdock root. No one there speaks very good English but after showing them a picture from this video one fellow pointed me toward a similar looking stalk. i bought it and when I got to the car I noticed it said nagiamo on the receipt lol. Nagiamo is a kind of Chinese yam but looks pretty similar to burdock root. I wonder how to use this yam? Anyway, I'll try some other Asian markets in my quest!

It did!! There is no way to get the root penetrated with flavor but also really be mild like real shrimp! So I brine then boil! IT softens it, gets out most of the pickle taste just leaving a really nice mild shrimp taste in the end!

This blew my mind!😲I can't wait to try this!😋🍽 Geologie maybe great on your skin but it unfortunately contains palm oil.😔 Palm oil is not cruelty free nor ethically Vegan. There is also no such thing as "sustainable" palm oil either, it's just more greenwashing. The industry is very destructive to many species and habitats. Together we CAN make a difference by choosing to buy ethical products. Beauty is not worth cruelty. Every choice and purchase presents us with an opportunity to put an end to an industry that is clearly broken. Vote for a better planet by voting with your wallet/purse.🌱🐾🕊🌏

Just replace the milk powder with coconut milk powder, everything else is vegan anyway. Personally I don't like to use palm-oil (which is what they use) so again coconut butter or imo best would be cocoa butter (but expensive) Lots of recipes might be an improvement on the commercial brand, but if you want to remain faithful to that recipe, then it would be something like this: 165g sugar 45g coconut or unrefined cocoa butter 45g hazelnuts toasted and de-skinned 25g coconut milk powder 25g cocoa powder 2g soy lecethin The scraped seeds of half a fresh vanilla pod.

Burdock has a nice crunch to it, though. If you cook it that way, you'll lose all the chlorogenic acid. Well, it's okay if it tastes good.
