So many "chefs" think they are the be-all and end-all. Julia had zero pretentions. She will never be matched.

Ironic that Julia was accused of not being the greatest chef. But honestly if you watch these shows you realize what a mistake that was she is incredible she could adapt she could do everything she had confidence she was amazing. Julia child's change the world literally

only hated by cooks like Ramsay ... because she IS a chef while they are just cooks from culinary schools not chefs from chef schools

I love that she cruelly squeezes the spinach! I can’t explain just how much I appreciate how she spills things, makes a mess and just delightfully keeps going!

Love Julia Child! Love how she gives alternatives and options to ingredients as she's going along, all the little tips and tricks she gives - she's a legend!

This will go down as one of my all time favorite JC. I think she used about 20 pots, pans, molds, bowls, etc. She is just “thrilled” with what she is doing, you can tell. And I love the way she gets excess from her hands by just flinging it on the floor as she continues to teach. I would have loved to be her friend! Thank God for these videos, they are priceless!!

She wiped the cutting board clean and flung the debris on the floor too lol. I am glad RU-vid's algorithm sent these to me but on the other hand, I'll be binge watching them for the entire near future.

The mixer looks like a toy compared to the newer models. My mom and I used that type of mixer. Love Julia since she started. In my 70’s. Miss watching her. Thank you for this.

I think “looks “is the operative word. These mixers could not do things like meat bread. But they did actually find job with everything else. I’ve been less than impressed the quality of small places for the last 30 years.

I finally got around to trying my hand at this one. I made Mussels Mariniere last week and I had a dozen or so leftover mussels and the broth that we couldn't finish ourselves. I decided to make a timbale from the leftovers. I reduced the broth from 1.25 C to .5 C of liquid, then completed the 1C of liquid I needed for the custard with heavy cream. I used 2/3 C of bread crumbs, 5 eggs, a buttered mold (souffle dish) and about a 1/2 C of grated gruyere. Baked in a bain marie for 30 minutes at 350 F. Turned out perfect. The flavor is astoundingly like mussels, but still not overwhelming or unpleasant. The whole mussels were still tender in the custard (not at all chewy, as can happen with them when reheated). I've committed to making many different variants of timbales with various leftover fillings. Wonderful new technique in my arsenal. Thanks again, Julia !

"Timbale" in French also means "timpani" or "kettle drum" which looks rather like a great big Charlotte mold with a rounded bottom.

My husband eats 4 raw eggs in a shake every morning - has for 32 years. What's wrong with that? We live near a farm and drink raw milk, right from the cow too, have since 1979.
