@@LanceHedrick while I think there's something to be said for brevity, plenty of other coffee RU-vidrs provide that. I love the depth and detail you go into, as well as the quirky vocal work and comedic relief. If I had to nitpick, I would say you sometimes get bogged down trying to repackage something you already said in a way that becomes redundant (I, at least, understand you the first time), but I do that too when I'm talking about something I'm passionate about, so it's hard to fault you. For me, it's had something to do with not having enough trust in your audience, so you feel like have to guide them to the correct interpretation. Just something to be aware of; constructive criticism. Keep up the great (ever-improving) content!

The thing I really appreciate with the Niche is the low retention and absence of old grounds getting mixed with my grind. This translates into the absence of old sticky oxidized oils in my extraction. I was lucky to get one at a price much lower than anything mentioned in this video. It would be fun for me to see the Sculptor besides a Niche when it is reviewed with espresso burrs.

You mentioned using the RDT method for reducing static on the Ode. I have one a V1 with the SSP MP burrs and saw a post/comment somewhere about simply touching the catch cup during the grind. I tried that and it works! Spritzing or putting a couple of drops of water on the beans before putting them in the hopper would almost always make a few beans stay in the hopper. Now, with dry beans, they all get ground and I'm not seeing any fines sticking to the cup or exit shoot. I don't know if it works for everyone but I'm pretty happy with the results.

Nice content as always! Glad you were doing comparisons with the Ode for filter. Seems like the design (flat burrs, hopper, and magnetic catch cup) is very similar to the Ode, with some definite upgrades. I will be curious to see what espresso is like once the burrs are available. I don't have a flat burr espresso grinder yet, but when those espresso burrs launch for the sculptor, It would be interesting to see you do a comparison between that and the Turin DF83 or even Lagom P64. Maybe a blind tasting like "Daddy Hoff" would do, just something to think about for future vids!

I'm likely going to order the 78 for espresso when it hits kickstarter. I have been using the Breville SGP for almost 3 years now. It works fine but it has always been lacking. This checks off all the boxes. Aesthetic, quality, price, performance. Time to get the credit card ready.

Hi Lance, thank you for another great review. I have a wilfa uniform with ssp brew burrs. I only make filter coffee. I was thinking about the weber eg-1. But the sculptor 078 also looks very nice. It also has a fines collector that the eg-1 does not have. How big of a differance in taste is there, also regarding hitting astringency. Do you miss the fines collector on the eg-1?

I usually think of the static as nothing but a nuisance but it's interesting to see Timemore use it to their advantage and essentially use it as a fines collector.

Dear Mr Burrrrrr man, thanks for another well-thought-out, informative, and enjoyable video. In this video, you compared the TS 078 against the Ode 2, noting the TS 078 provided a superior tasting cup.....can you hypothesize whether the TS 064 would also trump the Ode 2 for filter (appreciating you are unlikely to have tried the smaller unit), or if the TS 078's advantage is solely due to a larger bur set? As a filter drinker who loves juicy fruity, light coffee's, would you take the 064 due to the high number of options, or pay another couple of hundred $$ and go 078 as its just that good and after market options will most likely come? Thanks Lance for being honest and telling how it is, even in the comment section. I am still amazed at how many Niche owners who love it (very well conceived and engineered machine for sure) have also convinced themselves that for 800 dollars the flavor quality actually fares well against competition. It doesn't at all with good beans. The workflow is wonderful that's about it. Flavor is very average for the price, many cheaper better options, even when it got out, but especially now of course.

Hi Lance, Thanks for this really comprehensive (as usual) review - I’m in the market to finally replace my 5+ year old Breville SGP and was originally going to go Ode 2 w/ SSP, but this looks to be the better option. Curious as to what settings you’re using for the different filter methods? I brew primarily drip but do pour over on the weekends when time permits. Thanks again for all the hard work you do - know that it is appreciated by all of us!

When the kickstarter opens for the espresso models, do you think it'd be smarter to go for the 078S for the bigger burrs that you said look a lot like the EG-1 ones or for the 064S for the wide availability of burrs in that size? (SSP etc). It sounds like there's a day 1 discount on the Kickstarter, so we'd probably have to make the choice before folks had a chance to review.

Do you think there's necessarily a reason to get the 078S over the 064S? The major differences they listed is the 078S has 400W instead of 180W, up to 1400RPM instead of 1200RPM, and obviously the bigger burr size. This is my first stand alone grinder and looking to use purely for espresso.

Lance, are the turbo burrs on this grinder able to be aligned, or would I be stuck with the factory alignment? The ghost burrs on the outer edge look like it would prevent me from using the expo marker approach to ensure alignment. Super interested on purchasing one, but don't want to be stuck in a situation with a grinder I can't align. Thanks!

Maybe I missed it but will it be able to do both espresso and filter coffee or will you have to pick one or the other? It won't be a Niche killer if it can't do both without needing to replace burs every time.

Is it generally felt that the "knocker" is an alternate to using bellows for zero retention? Difference being with bellows the fines/chaff ends up in the cup versus with the knocker it is collected and tossed? With so many zero retention grinders using bellows, I'm looking for the rationale of NOT using bellows with this style grinder. Thanks for the great review! Looking forward to your final thoughts prior to the Kickstarter release (hopefully) in a couple weeks.
