I shared this recipe with my daughter. After making it her daughters, teenager’s, said, “mom, please always have a bowl of this in the fridge.” A winning recipe for sure.
I watched this video last night, went out and bought the ingredients today and made it for dinner tonight. All I can say is, “OMG! This is so good!” My husband loved it too. Thank you so much for this wonderful recipe. It is definitely a keeper!
I made this in advance of an incoming hurricane. It made a lot and was so delicious. I converted the recipe to use a pressure cooker. Amazing taste! I will be making this over and over!
That looks really good! I think it would also be great as a cold salad...maybe cook/chill everything, omitting the tomatoes to add fresh when it's chilled. Just might be a side at my Labor Day family gathering! Thanks!!
Yum! I was at the farmer's market in Minneapolis this morning and I have everything in my kitchen to make this for dinner tonight. Nothing better than fresh summer ingredients tossed together like this. Can't wait to eat this tonight.
Sounds delicious. Last week I roasted San marazano and plum tomatoes with shallots and garlic. Diced it up a bit after roasting in olive oil and added the pasta. Delicious. Making this again today with sweet peppers added.
Oh my goodness I never thought to hold the corn this way to cut it off! So silly, I always stand it straight up and it’s awkward to do it that way. 😂😂😂
