Tommy's Secrets for Crispy Chicken Skin on a Pellet Grill | Z Grills

In this video, Tommy'll show you the secrets of how you can get the skin on your chicken crispy every time using a pellet grill. With crispy chicken, you can enjoy the texture and flavor of chicken like never before. This is one beginner-friendly recipe you want to add to your weekly routine! Ingredients:
1 Chicken thighs, and legs
Your favorite bbq rub
Simple salt brine
1 TBS baking powder
1 TBS kosher salt
1 TSP granulated garlic
Treat your chicken for Crispy Chicken:
Step 1. Dry the chicken with paper towels, taking care to soak up any extra moisture.
Step 2. Clean up the meat to remove any imperfections.
Step 3. Gently loosen the skin of the thighs and legs. If anything catches, use your knife to peel it away slowly, but be sure to leave it connected.
Step 4. Evenly spread the brine mixture under the skin.
Step 5. Massage the brine into the thighs and legs, taking care to reach each spot. Granulated garlic is a great addition.
Step 6. Stretch the skin back over the chicken, then apply the remaining salt brine. Make sure the meat looks neat.
Step 7. Allow the chicken to refrigerate on a wire rack for 3 to 6 hours.
Step 8. Remove the chicken, then season the chicken with your preferred seasoning. Do not lean too heavily on the salt since salt was included in the brine.

I just found one of these on the side of the road the auger was seized up with a little bit of Ingenuity I took it apart put it back together again and it works just fine my boys and I are smoking some chicken right now🎉

Should be 180!! Not 165 unless you want slim uncooked dark meat.
