This time we visited Tonkatsu Wakaba in Hakata.
At lunchtime, the popular restaurant attracts a long line of businessmen working in the neighborhood as well as foreign residents.
The restaurant offers a choice of domestic and foreign meats, and its tonkatsu is popular at lunchtime at a relatively reasonable price.
The deep-frying method is unique, with the meat being fried rare in oil at less than 100 degrees Celsius, and then the batter is fried at a higher temperature to crispy perfection.
As explained by the restaurant staff, this method of frying produces a moist, tender, juicy cutlet that retains its flavor.
It takes a lot of time and effort to remove the blood from the cutlet and fry it for a long time, but it is because of this hard work that the cutlet was so delicious and memorable.

Busy boys. The low temp frying is interesting. Because I noted a number of those pork fillets were too pink for safety.

ロース肉の淵の白身をカットしてますけど、残したままではやっぱりよくないんでしょうかね?。白身も美味しいので食べちゃいたいです😅
